Hello food lovers!

Today I'm gonna show you how to make a mouth-watering appetizer.

" Pickled relish papaya "

This is pickled papaya or we call it atsara in our dialect. We use salt, sugar, vinegar and pepper to taste.

For the procedures, you'll need.

3 medium sizes green papaya (shredded )
1 medium carrot (julienne)
1 small red bell pepper (julienne )
1 medium size ginger(julienne)
4 garlic cloves
3 cups vinegar (I used coconut wine as a vinegar)
2 cups sugar (I used brown sugar)
1 tsp.salt

For soaking(for extracting the papayas exist liquid) you'll need,

water
salt

to start to wash everything you need.

then extract the papaya juice by hand to make it smooth.
wash it 2 times
after shredded papaya is ready, time to make the relish

put all together with the vinegar and sugar and put on medium heat let it boil.
after put on the spices and veggies (garlic, onion, ginger, red bell pepper and carrots)
lastly, salt and pepper to taste.

Now it's ready to combine just let it cool down put it in jars and it's ready to eat (but it's the best way to eat when fermented for a day)you can store it in the fridge and consume whenever you like.

Take note that you can add on raisins if you like its a good complement also when you're having fried and grilled dishes 🙂

When you are having pickled relish papaya it is a great snack for a diabetic person.

It also promotes digestion, lowering cholesterol because of its fibre content.

Aids in weight loss and good eyesight.

And it's also rich in vitamin C and antioxidants.

In short, it boosts your immune system 😉
