Figs cooked in orange juice | Higos cocidos en jugo de naranja

This month I have been taking advantage of the harvest of figs from my fig tree. This year it has been generous with me, and we have any quantity of figs to make different kind of recipes. The best way to cook figs is in marmalades to preserve them for the whole year. Apart from that, I use the marmalade to prepare any kind of breads, tatins and pies.

Venezuelan , who love figs, eat them in sweets, but they don't like them as a fruits. We cook them green and when they are ripe. It is normal to see people selling them stored in jars along the motorways or may be your neighbour prepare and sell them.

It is a fact that figs are pear like pods filled with many tiny flowers inside it. We can say that figs are flowers and not fruits. They are the most generous food that benefit health, very nutritive because they contain minerals, vitamins and antioxidants.

This time I am cooking the figs in orange juice. I chose the ripe ones. I don't wash them because the marmalade becomes too watery. I clean them with a clean damp cloth, one by one. I cut the footstalk and make an X cut in the underneath part. As it is not a watery sweet you have to watch your marmalade otherwise it will burn very quickly. The time of cooking is rapid.

To prepare this marmalade you need:

  • two kilos of ripe figs
  • 500 grams of sugar
  • the juices of two oranges
  • 1 clove
  • sterilized jars to store them

Preparation:

  • clean the figs with a damp cloth
  • cut the footstalks
  • cut an X in the underneath part
  • place the figs in a big pan
  • add the sugar spread all over the figs
  • add the clove
  • add the orange juice
  • cook them until a sirop is formed
  • still hot smash them so that you can make the marmalade
  • I left them whole because I am going to make a present
