Octopus and Clam Salpicon | Recipe

Today's preparation is a dish that is served cold, and is perfect as a starter or appetizer, it is a Salpicón.

The Salpicon, is basically a preparation based on meat, fish and/or seafood in vinaigrette, with some vegetables. The one we will make today is of octopus and clams, with onions, coriander, and sweet bell pepper, in a lemon vinaigrette.

La preparación de hoy es un platillo que se sirve frío, y es perfecto como entrada o aperitivo, se trata de un Salpicón.

El Salpicón, es basicamente una preparación a base de carnes, pescados y/o mariscos en vinagreta, con algunos vegetales. El que hoy haremos es de pulpos y almejas, con cebollas, cilantro, y ají dulce (pimiento dulce), en una vinagreta de limón.

Ingredients

  • 1 small octopus (1 kg approx)
  • 500 grs of clams
  • 1 onion
  • 4 sweet bell pepper
  • 1 bunch of fresh coriander
  • 2 lemons
  • olive oil
  • salt and pepper

Ingredientes

  • 1 pulpo pequeño (1 kg aprox)
  • 500 grs de pepitonas
  • 1 cebolla
  • 4 ajíes dulces
  • 1 manojo de cilantro fresco
  • 2 limones
  • aceita de oliva
  • sal y pimienta

Preparation / Preparación:

We will start by cooking the clams and the octopus.

We must wash the clams very well to remove any sand they may have, and then we place them in a pot with water and a teaspoon of salt, and we take them to the fire for 15 minutes. (Do not cook more than 15 or 20 minutes).

Iniciaremos cocinando las pepitonas y el pulpo.

Las pepitonas las debemos lavar muy bien para retirar la arena que puedan tener, y luego las colocamos en una olla con agua y una cucharadita de sal, y las llevamos al fuego por 15 minutos. (No se deben cocinar más de 15 ó 20 minutos).



When the clams are cooked, we take them out of the water and let them cool down. (The clams can be cut into pieces or left whole, that is to the taste of the diner).

Cuando estén cocidas las pepitonas, las sacamos del agua y las dejamos enfriar. (Se pueden cortar en trozos o dejarlas enteras, eso es al gusto del comensal)

Now, we move on to the octopus.

First, we wash it well. And then, to cook it we will do the ritual called "scare the octopus", which is to introduce the octopus in hot water with salt 3 times in a row for a few seconds, and then leave it cooking for a period of 20 minutes approximately.

Ahora, pasamos al pulpo.

Primero, lo lavamos bien. Y luego, para cocinarlo haremos el ritual que se denomina "asustar al pulpo", que es introducir al pulpo en agua caliente con sal 3 veces consecutivas por pocos segundos, para luego dejarlo cocinando por un lapso de 20 minutos aprox.





Once this time has passed, we take the octopus out and cut it into small pieces.

Una vez transcurrido este tiempo, sacamos el pulpo y lo cortamos en trozos pequeños.



Finally, we cut the onion and sweet peppers in julienne, and the coriander finely cut.

Ya para finalizar, cortamos la cebolla y los ajies dulces en juliana, y el cilantro finamente cortado.



Now, we place all the ingredients in a tray, add the juice of two lemons, a splash of olive oil, salt and pepper to taste, and mix everything very well to integrate the flavors.

Ahora, colocamos todos los ingredientes en una bandeja, le agregamos el jugo de dos limones, un chorrito de aceite de oliva, sal y pimienta al gusto, y mezclamos todo muy bien para integrar los sabores.


It is time to plate and enjoy this delicious cold dish.

Es momento de emplatar y disfrutar de este delicioso plato frío.
