The Creamiest Easy Butternut Squash Soup Recipe!

I had a couple of these lovely butternut squash stored away for the perfect day and yesterday’s chilly evening was just it!
I had spent the early part of the day reorganizing our pantry and then I took a break to read a bit and have some tea.
This little guy felt he needed to join me in keeping warm!

I went back downstairs and pulled three butternut squashes out to split in half, deseed and broil.

The best way to deseed vegetables such as this or fruits such as cantaloupes is by using an ice cream scooper which also doubles as a melon baller too!
I brush my halved squash with melted unsalted butter using a silicone basting brush as they are easier and more hygienic to clean and can be used for barbecuing as well as they withstand the heat!
I broil my squash for approximately 20 minutes flipping halfway in between or until you can easily insert a toothpick in them.

While they broil, in half a stick of butter I sauté 1/2 a red onion, 1 tablespoon minced garlic and 1/2 cup of chopped carrots over medium heat turning it off when onions become translucent.

To this I add 1 1/2 cups of chicken stock and I let it simmer.

Once my squash is broiled I peel my squash. They are way easier to peel while hot and if you are sensitive to heat I recommend using heat resistant cooking gloves for this. The reason I don’t peel them prior to broiling is I feel they dry out. The skin preserves some of the moisture and sweetness.
I add my cubed squash to the stock and I let it simmer a little longer.

Turn off the flame and all the ingredients, in batches if necessary to your blender. I purée it all until it’s nice and smooth then proceed to bring it back to the stove and simmer once again.

Grate in 1/4 tsp of nutmeg and add 1/3 cup heavy cream and 1 tbsp organic maple syrup. Salt and pepper to taste and let simmer for 5 minutes.
