One Step Coconut Custard Pie Recipe!

Now that the hens are back to laying their yummy and beautiful eggs there is no excuse to not bake! My favorite desserts are pies and custards so this dessert takes the blue ribbon for me and it’s the easiest recipe ever!

Ingredients
4 eggs
1 cup heavy cream
1 cup water
4 tbsp melted butter
1 1/2 cups sweetened shredded coconut
1 1/2 cups white sugar
1/2 cup flour
1/2 tsp baking powder
1/4 tsp salt
1 tbsp vanilla

Directions

  1. Preheat oven to 350 degrees
  2. Place all ingredients in a blender
  3. Pour into a pie pan greased with coconut oil
  4. Bake for 45 minutes
  5. Cool for one hour on counter and one hour in the fridge.

    Slice and enjoy!
    I like to pipe fresh whipped cream on top and have with a cup of coffee. This pie is a truly no effort dessert as it separates on its own and forms its own crust, filling and topping.
