Easy Burrata Pasta Recipe!

Who doesn’t love quick, easy and filling recipes for dinner specially when our minds are all over the place with everything that’s going on in this world!
For this recipe the star of the show is Burrata!

This delicious cheese is pretty much mozzarella on the outside cream in the middle.
It always has a place on my charcuterie boards and it’s great in insalata Caprese and on avocado toast!

Cook 2 cups of rigatoni al dente. Save one quarter cup of the pasta water and set aside.
On medium heat heat up 1/4 cup of extra olive oil.

To your oil add 3 cloves minced garlic (I like to use a garlic press)

1/4 cup diced red onion, 1/4 cup diced Roma tomatoes and 1/4 grape or cherry tomatoes cut in half.

Once your vegetables are sautéed, cut the Burrata in four parts, add to this and toss in your pasta stirring quickly to get everything to incorporate nicely. Add the pasta water you set aside and salt and pepper to taste.
Toss in 2 tbsp fresh chopped basil and 1/4 teaspoon red pepper flakes.
Serve with freshly grated parmigiano and enjoy!
