Hi all! What do you have for your lunch today? Usually, I just have quick lunches at work. But today is my day off, so I want yo treat myself a colorful nutritious meal. Fruit salad and egg-jacketed salmon (I have made up this name) :D, process estimating time 30 mins without taking photos, 1h30 mins if take photos while processing.
We are what we eat, right? So why don't bring ourselves more natural foods? People eat to live or live to eat, depends. I definitely live to eat, that why I am so aware of the foods I consume. Because I want to live longer to...eat more!
Now, let's get our lunch started with salad. Why salad first? Simply because salad needs to be served cold. When it comes to salads, I make it mainly just veges and fruits. Here is all I have in my fridge.
From the picture you can see all the ingredients, but let me pretend to write them down to make it look more similar to a proper recipe.
- 4-5 strands of asparagus
-1 strawberry fruit
-1/3 apple
-1/2 brown mushroom
-1/4 red onion
-3g lemon skin (optional)
-apple vinergar
-olive oil and salt
First, we cut the mushroom and asparagus, put them in a big beautiful bowl, pour a little water and scatter some salt on. Put the bowl in microwave for 2 mins, then drain out the water.
Next, cut strawberry and apple into slices. It took me 1 min to cut and 5 mins to arrange the fruits for this photo. Don't know what we really want to eat anymore, foods or photos?! But it's pretty anyway, enough to be happy :)
Then, it depends on you if you want to have some lemon skin and lettuce. I like lemon skin, it makes my salads taste fresher.
Leave onion for the last. Why? So you don't have to wash your knife twice. Don't want to say I am lazy, but it's true, I am lazy. Therefore, I always try to avoid all the extra works.
Remember the bowl in your microwave? Take it out, put all the fruit stuff on, dressing your salad with a bit apple vinegar and olive oil. Look! it's so colorful isn't it?
Put it in the fridge, and start on our main meal: Egg-jacketed salmon.
Is it too obvious if I say we need eggs and salmon? Yes, we need eggs and salmon. And corn flour.
To have the best result, salmon needs to be marinated with lemon juice, soy sauce and pepper. Leave it in fridge overnight.
Now, display our salmon on the board, act like professional and make sure it is already dry from the sauce.
Mix the egg with salt. Then dip our salmon in the egg, cover it with corn flour right after that. And, put it in the oil pot. Don't forget to preheat the oil pot. The best time is 3 mins not one year before.
Wait until you see the mom-said yellow-orange-brown color, then I think it's ready to serve.
Place your salmon in a small cutie plate, white color, must be white color so people can see our achievement.
And, tah dah! The happiest moment comes, eating :D. I am a decent, healthy Vietnamese so I can't survive without rice. Use chopsticks if you can. Seeing people eat salmon with a fork kills me. Now, enjoy your lunch! Ah, don't forget the salad in your fridge.
