It was a plant-based bowl meatless Monday last night.
Moroccoan lentil and butternut salad with couscous and a side salad.
This is colorful, but presentation is a challenge, especially with couscous, so each element of the supper was served in individual bowls.
Recipes requested and promised will be up on my blog in a couple of days. And it feels Inhad two, today!
