Jalebi

To prepare the Indian sweetness of Jalebi, you need to prepare these components:

sour cream - 1 tbsp. l .;
water - 120 ml;
flour - 120 g;

baking soda - 3 pinches.
These components are necessary to knead the dough for this treat. However, syrup must also be made. For this we need:

drinking water - ½ tbsp .;

granulated sugar - 250 g;
lemon juice - ½ tbsp. l .;

Next, you need to immediately boil the syrup. To do this, pour in the amount of granulated sugar that is indicated in the recipe. The mixture must be placed on the stove and set the fire slightly above average. With constant stirring, you will need to completely dissolve the mass.
Cardamom must be sent to the syrup. The mixture should be boiled, after which lemon juice is poured into it. The resulting composition will need to be boiled, but not more than 5 minutes. In this case, the minimum heating is set.

Next, to create an oriental sweet, you will need to take a separate deep plate. Sour cream flows into it. The fermented milk product must be diluted with water. Only after that a dry mixture based on flour is poured into the composition.

Everything will need to be thoroughly mixed. The mass should become sufficiently tender and uniform. Its consistency will turn out to be average: not too thin, but also dense, thick and also impossible to call. In order for the dough to reach the required state, it will need to be put in heat for 2 hours.
It is recommended to transfer the mass to a pastry bag. In the selected container, it is necessary to heat the vegetable oil. Our spicy dough spirals quickly and accurately into it. Such unusual blanks must be fried on both sides until their hue becomes golden.

To get rid of excess oil in this sweet, ready-made coils are sent to paper towels or napkins.

Then you need to return to our spice syrup, which we boiled at the very beginning of the preparation of Jalebi. Eastern sweets will need to be literally dipped in this solution for half a minute.
