El ejercicio fotográfico continúa trae sorpresas, y más cuando lo entrelazamos con nuevas personas, sorprende lo que aprendemos cuando intentamos indagar y conocer sobre lo que vamos a fotografiar. Me gusta conocer, pero más que ello, conocer el origen, claro, no en todos los casos aplica. Este postre que les presento ha llamado mucho mi atención, no lo había visto elaborado de esa manera, y ha creado mucha curiosidad en mí, tanto, que fui la mi acostumbrada investigación que generan estos casos. Ha sido una sorpresa lo que he encontrado tras la búsqueda, manifestándose como la gastronomía entrelaza a distintas culturas y tradiciones de distintos pueblos.

The photographic exercise continues to bring surprises, and more so when we intertwine it with new people, it is surprising what we learn when we try to investigate and learn about what we are going to photograph. I like to know, but more than that, to know the origin, of course, not in all cases applies. This dessert that I present to you has caught my attention, I had not seen it prepared in this way, and it has created a lot of curiosity in me, so much so, that I went to my usual research that these cases generate. It has been a surprise what I have found after the search, showing how gastronomy intertwines different cultures and traditions of different peoples.

Para empezar, este postre en la región de Boyacá, Colombia, lo llaman Merengón, es una merienda a base de merengue rellena con frutas en almíbar y crema pastelera, decorada con frutas frescas. El merengue, en algunos lugares, le dicen también Suspiro, se hace con la clara del huevo batido y le añaden azúcar; una vez hecha la mezcla la llevan al horno, resultan ser blandos, livianos, semiduros, crujientes y suaves al paladar. Es muy usado en la pastelería como relleno de tortas y similares.

For starters, this dessert in the region of Boyacá, Colombia, is called Merengón, it is a meringue-based snack filled with fruit in syrup and pastry cream, decorated with fresh fruit. The meringue, in some places, is also called Suspiro, it is made with beaten egg whites and added sugar; once the mixture is made, it is baked in the oven, it is soft, light, semi-hard, crunchy and smooth to the palate. It is widely used in pastry making as a filling for cakes and similar products.

Resulta que en Colombia le dicen Merengón a la Pavlova, es la Pavlova colombiana. La Pavlova es un postre horneado a base de merengue, su nombre proviene de Anna Pávlova, una bailarina rusa. La receta es reclamada por los pobladores de Nueva Zelanda, pero también, la propiedad la reclaman los Australianos. Lo más cierto es, que, al parecer, la bailarina en uno de sus viajes visitó el país de Nueva Zelanda, y por ese motivo el postre lleva su nombre. Sabemos que en el pasado estuvo acentuado la migración europea es estas latitudes, y no es raro pensar que muchas cosas se hayan escurrido en estas tierras.

It turns out that in Colombia they call Pavlova Merengón, it is the Colombian Pavlova. Pavlova is a meringue-based baked dessert, named after Anna Pavlova, a Russian ballerina. The recipe is claimed by the people of New Zealand, but it is also claimed by the Australians. The most certain thing is that, apparently, the ballerina in one of her trips visited the country of New Zealand, and for that reason the dessert is named after her. We know that in the past the European migration was accentuated in these latitudes, and it is not strange to think that many things have slipped into these lands.

Está muy claro como el intercambio gastronómico crea enlaces culturales, en ocasiones pasa tanto tiempo que a través de las nuevas generaciones se va perdiendo el origen de la información. La idiosincrasia juega un papel fundamental dado que las recetas originales se van personalizando, adaptándose a las zonas. Sabemos que la gastronomía es una manifestación de los pueblos y su cultura, y esta se va transformando y adaptando en la medida que va atravesando fronteras.

It is very clear how the gastronomic exchange creates cultural links, sometimes so much time passes that through the new generations the origin of the information is lost. The idiosyncrasy plays a fundamental role since the original recipes are personalized, adapting to the areas. We know that gastronomy is a manifestation of the people and their culture, and this is transformed and adapted as it crosses borders.
