This traditional Indonesian noodle cannot be said to be completely instant. Even though cooking these noodles looks quite instant, that is, only by boiling them.
The tricky side of serving the noodle dish is the sauce made of peanuts, chilies, kaffir lime leaves, and Kaempferia Galanga / Aromatic Ginger.
It takes a little bit of work in the kitchen to make peanut sauce because it's made with a mortar, not a blender.
This time I share with you how I serve 'Yellow Noodles With Peanut Sauces.'
CONNECTED IN DISTANCE
Together at a distance? This is what I call the two main ingredients separate but still on the same serving plate.
I have never liked to serve separate sauces from the main ingredient in different containers. So I have to think about how to unite them in the same plating container, but still accentuate their respective characters as different materials.
SET UP YELLOW NOODLES ON A SERVING PLATE
Arrange yellow noodles on a serving plate. Pay attention to the neatness of the texture of the noodles on the plate.
Place the noodles in the center of the plate. We have to leave some space to put the peanut sauce.
This form does not live up to my expectations. Indeed, this is my first practice forming a paste-like this. The shape isn't exactly what I wanted, but it's not exactly bad.
That's because these noodles are not as elastic as pasta in general so they break easily. I fail to spin them with a fork. So I did random movements to form these noodles.
PREPARING GARNISHES
For the garnishes, I only use 3 kinds of ingredients. Seedless tomato slices, sliced kaffir lime leaves, and one ingredient with a crispy texture.
These are the snack of crispy corn balls covered with chili powder. I know it might be a bad choice to add color to serving plates. But I am short on other snack ingredients. I'm out of chips.
I should have used Cassava Chips, but unfortunately, my mother has finished my jar of Cassava Chips. Upps!
ADDING PEANUT SAUCE
Time to add peanut sauce! Add carefully, to the left or right side of the plate. It is tailored to your taste or the ease with which you can adjust it.
I purposely separated them to emphasize their respective characters.
DECORATE WITH SMALL DETAILS
Add small details with careful motion. Also, pay attention to the composition of the dosage amounts of the main ingredients. Try to add them to the main object in proportion to each other.
Add the tomato slices first. Then add the kaffir lime leaves to the top of tomato slices.
For the small corn balls, I placed them in the center of the noodles, and also highlighted the kaffir slices of lime leaves.
WHY USE KAFFIR LIME LEAVES?
Kaffir Lime Leaf is a typical Indonesian herb that has a citrus flavor and aroma. For garnishes, slice very thinly to soften the strong flavor.
They will emphasize the dish with a fresh taste and aromatic fragrance. So they are found in many vegetable salads and various sauces that use peanuts.
