Papaya, Carrot & Potato | Trying 'Plant based Diet' for a few days.

I was eating red meat in a row. It was feeling like my body can't take it anymore. So I decided to go for a plant-based diet for a few days to make a healthy balance.

As we are not vegetarian so, to be honest, we don't have many variations in our vegetable cooking process. We usually cook curry, gravy and mix it with lentils; that's it.

This time I tried three different ingredients; papaya, carrot, and potato. It was colorful, was soft in texture, and mild in taste; perfect for my body & gut health.

Here's how I cooked it.

The process is very simple, anyone can try this.

  • Wash and cut the vegetables properly. It takes a few washes to get rid of the stickiness of the papaya.
  • No need to steam them.

  • Finely cut them.

  • Add onion slices and chili in vegetable oil and cook it for a minute.

  • Add the vegetables, add salt, turmeric powder, mixed spice powder, and put a lid on. Cook it for 15 minutes. Add a small amount of water if needed.

I like it half-cooked, you can cook it for longer for a softer texture.

It's not super delicious but it's worth trying. No need to say that these three ingredients are full of nutrients. And papaya is good for our gut health. Also, carrots can reduce the toxicity of the body.

I'm trying this recipe every other day. It's good to go with roti (breakfast) and with rice (lunch + dinner).
