Hello, beautiful Hivers! I hope you are fine and healthy wherever you are. Today I am going to share with you a very delicious and healthy recipe: chicken with capsicum. The ingredients that I have used for this recipe are simple, and I bought them from my local grocery store. Let's get started with our recipe for today.
Ingredients
Boneless, skinless chicken breast 500g, cut into small cubes
Capsicum 300g, cut into cubes
Onion 100g, chopped
Tomatoes 100g, chopped
Ginger 30g, fine julienne
Garlic 30g, chopped
Fresh green chillies 10g, chopped
Salt ½ teaspoon/ to taste
Black pepper ½ teaspoon/ to taste
Red chilli flakes ¼ teaspoon
Turmeric ¼ teaspoon
Cumin seeds ½ teaspoon
Cooking oil 4 tablespoons
Fresh coriander leaves For garnish
Cooking Method
Place the cooking pot on medium heat. Add the cooking oil and the chopped onion.
Sauté the onion until slightly golden in color.
When the onion turns a light golden color, add chopped ginger, chopped garlic, and cumin seeds. You can also use ginger/garlic paste if you like. Sauté the ginger, garlic, and cumin until fragrant.
When the ginger, garlic, and cumin are fragrant, add tomatoes and chicken to the pot. Also add salt, black pepper, red chilli flakes, turmeric, and chopped green chillies, and mix the entire mixture in the pot well.
Keep cooking and stirring until the color of the chicken starts to change.
Once the color of the chicken starts to change, add the chopped capsicum and stir well. Put the lid on and reduce the heat to low. Cook the chicken and the capsicum on low heat for 15 minutes, stirring at 5-minute intervals. You can use a splash of water if the contents start to stick to the bottom of the pan during the cooking process. After 15 minutes of cooking, turn the heat off.
Now the chicken with capsicum is ready. Garnish with the chopped fresh coriander and ginger.
