Smoked or grilled meats retain a really unique and delicious flavor, and I think I've already said it, but they are by far my favorite, even to make stews with them, plus they do not require much cooking time as they are already precooked. Today I had to spend much of my morning on the street, so to cook I needed to do something quick, so I opted for a quick stew with the meat we had left over from my birthday barbecue, we had pork leg, beef tenderloin and a rump of chicken, and yes, the three meats I used for this stew.

This is also a recipe that brings back memories of my childhood, my father had a grilled meat restaurant and there was always grilled meat in the fridge, so my mother resorted to prepare something similar to offer us at breakfast with arepas or something like what you see in the pictures for lunch, even a pabellón criollo in which she substituted the carne mechada for this meat, it simply tasted like glory, and is that preparing this stew is something that does not even take us 30 minutes, so it is ideal for when we do not have enough time for a big lunch.

While you prepare a simple rice you can prepare this stew, so for this kind of thing I love it, and as I mentioned before, here I used three types of animal protein, however, this recipe can be used with only one type of meat. Join me and I'll show you how I prepare it.

300 g of roasted beef tenderloin.
200 gr of roasted pork leg.
1 chicken rump.
1 1/2 Cup of prepared tomato sauce.
Salt and pepper to taste.
1 large onion, finely chopped.
1 finely chopped ripe paprika.
1 finely chopped celery stalk.
1 tsp sugar.
1 Tbsp soybean oil.

Preparation

Preparation time: 5 Minutes.
Cooking time: 20 Minutes.

We start by sprinkling the sugar in a hot pan, so that it caramelizes a little, then add the oil and chopped onion, sauté until crystallized to continue adding the paprika, sauté another minute and add the celery, stirring constantly.

We continue adding the prepared tomato sauce and let it cook for about 5 minutes, then add the chopped meats to taste, I chopped them into small cubes so that it could then be eaten with arepa or bread, stir well and let it cook over low heat and covered for about 10 to 15 minutes.

In my case I did not add any seasoning, not even salt, because the meat was already well seasoned and the prepared tomato sauce I used as well, in case you do not have this sauce at home, you can either use tomato paste diluted with vegetable or meat broth, or canned tomatoes, or if on the contrary you have good time to prepare this stew, you can use chopped fresh tomatoes which would need about 30 minutes more cooking time approximately.

Rice, baked plantains, avocado and arepitas were the perfect accompaniments to this delicious carne asada stew that to tell the truth was too delicious.

Las carnes ahumadas o a la parrilla conservan un sabor realmente único y delicioso, y creo que ya lo he dicho, pero son por mucho mis favoritas, incluso para hacer guisos con ellas, además que no requieren mucho tiempo de cocción pues ya están precocidas. Hoy he tenido que pasar gran parte de mi mañana en la calle, así que para cocinar necesitaba hacer algo rápido, por lo que opte por un guiso rápido con la carne que nos quedó de la parrillada de mi cumpleaños, nos quedó pernil de cerdo, solomo de res y un cuadril de pollo, y si, las tres carnes las utilice para este guiso.

Esta es además una receta que me trae recuerdos de mi infancia, mi padre tenía un restaurant de carne asada a las brasas y siempre había carne asada en la nevera, por lo que mi madre recurría a preparar algo similar para ofrecernos en el desayuno con arepas o algo parecido a lo que ven en las imágenes para el almuerzo, incluso un pabellón criollo en el que sustituía la carne mechada por esta carne, simplemente sabia a gloria, y es que preparar este guiso es algo que no nos quita ni siquiera 30 minutos, por lo que es ideal para cuando no tenemos tiempo suficiente para un gran almuerzo.

Mientras preparas un arroz sencillo puedes preparar este guiso, así que por este tipo de cosas lo amo, y como lo mencione antes, aquí utilice tres tipos de proteína animal, sin embargo, esta receta puede ser usada con un solo tipo de carne. Acompáñame y te muestro como lo prepare.

300 gr de solomo de res asado.
200 gr de pernil de cerdo asado.
1 Cuadril de pollo.
1 1/2 Taza de salsa de tomate preparada.
Sal y pimienta al gusto.
1 Cebolla grande finamente picada.
1 Pimentón maduro finamente picado.
1 Tallo de apio finamente picado.
1 Cdta de azúcar.
1 Cda de aceite de soya.

Preparación

Tiempo de preparación: 5 Minutos.
Tiempo de cocción: 20 Minutos.

Comenzamos esparciendo el azúcar en una olla caliente, de manera que se caramelice un poco, seguido agregamos el aceite y la cebolla picada, salteamos hasta cristalizar para continuar agregando el pimentón, salteamos otro minuto y agregamos el apio, sin dejar de revolver.

Continuamos agregando la salsa preparada de tomates y dejamos cocinar unos 5 minutos, seguido agregamos las carnes picadas a gusto, yo las pique en cubitos pequeños de forma que luego se pudiera comer con arepa o pan, revolvemos bien y dejamos cocinar a fuego bajo y tapado por unos 10 o 15 minutos.

En mi caso no le agregue ningún tipo de condimentos, ni siquiera sal, pues la carne ya estaba bien condimentada y la salsa preparada de tomares que use también, en el caso de que no tengan esta salsa en casa, pueden bien utilizar pasta de tomate diluida con caldo de vegetales o carne, o tomates en lata, o si por el contrario tienes buen tiempo para preparar este guiso, puedes usar tomates frescos picados lo cual necesitaría unos 30 minutos más de cocción aproximadamente.

Arroz, plátanos horneados, aguacate y arepitas fueron los acompañantes perfectos para este delicioso guiso de carne asada que a decir verdad quedo demasiado delicioso.
