Friday Cooking Contest: egg and veggies cupcakes snack

Hello everyone, on this occasion I am going to show you how to prepare a delicious, healthy and very nutritious snack, these are egg and vegetable cupcakes, they are like small omelettes perfect for snacking.

With this post I am participating in the cooking contest of the community @indiaunited. I am happy to be able to interact with people from all over the world thanks to these initiatives.

Now, I will tell you the ingredients you will need for the recipe:

3 eggs
1/2 zucchini
1/2 carrot
a bunch of spinach or chard (I used amaranth leaves since they grow wild around here)
1/2 onion
1/2 bell pepper
4 sweet peppers
chives
cheese (whichever you like)
garlic powder, salt and pepper
oil
Cupcake mold.


Procedure:

1- Wash all the vegetables and chop them up small, the carrot can be grated.

2- Put a frying pan on the fire and add some oil, wait for it to heat up and start adding the onion, the bell pepper, the sweet peppers and the chives. add some salt so that they release their juices. When they soften a little, add the zucchini, stir everything and let it cook for a minute. finally add the carrot and the spinach. add a little more salt and the garlic powder (like 1/2 teaspoon) and keep stirring until all the vegetables have softened.


3- Remove from the heat and place the cooked vegetables in a bowl. Then in a separate bowl break up the eggs and add salt and pepper, beat them and add them to the vegetables. Add some cheese and mix well all the ingredients



4- Now preheat the oven to 350° F or 180° C. Take the cupcake mold and oil it, spread it well with a napkin.

5- Place a couple of tablespoons of the mixture in each space and then top with a little more cheese


6- Put the tray in the oven and cook for approximately 15 minutes (it always depends on the oven, so you should check the degree of cooking).

7- When they are ready, remove them from the oven and let them rest for a few minutes before unmoulding.

8- Finally, carefully unmold them with a spoon and serve them. You can decorate them with some chopped chives.


Now all that's left is to enjoy it. Share it with friends or save it for an afternoon snack or for work, it's also perfect for eating after exercise.
