Bro Eli answered this by using 1 John 1:3

1 John 1:3 KJV
That which we have seen and heard declare we unto you, that ye also may have fellowship with us: and truly our fellowship is with the Father, and with his Son Jesus Christ.

This verse explains it all. It means, things reported were not things they saw but also things they heard. So Matthew reporting what happened on the mountain does not necessarily mean that he was there.

Luke also reported the same event in Luke 9:28-35.
