Cooking patarana vegetables (pliek sauce) a typical Acehnese dish with Malikussaleh Lhokseumawe University KKN students

KKN students from Malikussaleh University Lhokseumawe who are members of a group of 12 hill villages carry out cooking and eating events with the hill village community.

This activity was carried out to strengthen friendship and also get to know the people in our village more closely, therefore the students invited all of us, women, to be able to fulfill invitations from students in order to cook and also eat together. This was also done as a form of student concern. with the hill village community.

As for our cooking menu with Malikussaleh university KKN students, namely cooking patarana vegetables or in Acehnese it is also called pliek sauce.

This dish is a very popular Acehnese dish which is very popular and is also enjoyed by the public as the most favorite dish in Aceh. The pliek soup menu was chosen to introduce Acehnese specialties to a number of Malikussaleh university students who live outside Aceh, who have never tried to enjoy pliek soup.

Pliek sauce is patarana (fermented coconut). This dish is in great demand by the people of Aceh, moreover, this dish is also often cooked for various weddings, eating meals with family on the beach, and many other events. This vegetable is also very popular. best enjoyed while still warm.

The recipe that I share is the size of 1 very large pan, so I adjust the recipe for the seasoning according to the amount of vegetables you want to cook, if friends want to cook portions at home, then you can adjust your own recipe according to the vegetables you want to cook.

materials:
1 young jackfruit
1 banana heart
400 grams of bean sprouts.
300 grams of melinjo leaves.
50 grams of melinjo fruit.
600 grams of purple eggplant.
10 liters of coconut milk.
500 grams of patarana.
9 young papayas.
300 grams of green chilies (cut oblique).
700 grams of kale.
5 stalks of lemongrass (small chopped).
100 grams of lime leaves (finely chopped)

ground spices:

300 grams of shallots
400 grams of garlic.
100 grams of cayenne pepper.
5 segments of turmeric.
100 grams of coriander.
70 milli round pepper

how to make:

cook water in a large pan, until it boils, then add the young jackfruit that has been chopped.

when the jackfruit is slightly cooked, and the cooking water is dry, add all the vegetables such as papaya, banana heart, and melinjo fruit as well as green chilies and lime leaves.

then add the salt, stir evenly so that it is not bland, then add the ground spices and enough water to cook the vegetables, Also enter the patarana that has been mashed together with the spices.

after all the vegetables are slightly cooked, add coconut milk.

add cassava leaves and melinjo leaves.

then when the melinjo leaves and cassava leaves are slightly cooked,The final step. Enter the purple eggplant and kale.

Stir all the vegetables evenly, wait until the vegetables are cooked, also add salt according to taste, taste test so that the taste is just right.

the community and also KKN students ate together with great joy, after dividing the tasks of helping each other in cooking we also enjoyed the results of our dishes, the patarana vegetables were very tasty and delicious, students outside aceh also said that the vegetables we cooked tasted very good , there are some of them who have never tried it, but after enjoying it they also like it.

today is also my happy moment with them because in a few days they will no longer live in our village, the assignment given to students is only a month, but their presence here helps the community a lot, of course in many ways.
