Indonesia consists of various ethnic groups, each ethnic group has its own characteristics with its own taste, such as the Javanese who are famous for their sweet dishes, the Batak tribe with spicy flavors, and the Malays for cooking fatty curry. Today I will share one of the sweet recipes typical of the Javanese, namely Semur.
Semur is a dish that is rich in spices such as mace, ginger, cardamom, candlenut, anise and other spices. The hallmark of this semur is its sweet taste with thick gravy that comes from sweet soy sauce.
Initially, semur were made from boiled meat and then cooked in sweet soy sauce. But as time goes by, there are many semur menus with various selected ingredients such as tofu, potatoes, green beans and various other ingredients. Today I will share a recipe for tofu semur with chickpeas. I like to combine the taste of tofu with chickpeas which are fresh and crunchy when bitten.
The main ingredient that I use to make tofu stew is white tofu, because this type of tofu has a soft texture and is easy to combine with various other ingredients.
Ingredients
The main ingredient :
12 pieces of white tofu
100 grams of green beans
The gravy :
100 mL of sweet soy sauce
500 mL of water
Ground spices :
5 pieces of garlic
3 pieces of large red onion
1 candlenut
2 tomatoes
3 red chilies
1 fruit of nutmeg
Dry seasoning :
1 anise
2 pieces of cardamom
2 cloves
1 cinnamon stick
1 segment of ginger
Additional Materials :
1/2 tablespoon of salt
1 Pack of ground pepper
1 leek
3 tablespoons cooking oil
Preparation
1.Cut the tofu into four parts, or adjust to the size of the tofu, don't cut it too small because when cooked the white tofu crumbles easily.
2.Cut the ends of the beans, wash and then cut into pieces according to taste.
3.Wash the leek and cut according to taste.
4.Crack the nutmeg, I used 1/2 of the nutmeg.
5.Cut red chilies, shallots, garlic, hazelnuts, tomatoes in small pieces, add pieces of nutmeg.
6.Give a little water to help smooth with a blender.
7.Blend all ingredients until smooth or not too smooth, according to taste. I prefer to chop it coarsely and find the spices in my dish.
8.Add pieces of ginger, cardamom, cloves, cinnamon and anise to the spices that have been blended.
How to cook
1.Heat the cooking oil.
2.Sauté the spices until fragrant
3.Add the chickpea pieces.
4.Add salt.
5.Add water,stir until well blended.
6.Cook until boiling, after boiling add pieces of white tofu.
7.Add sweet soy sauce.
8.Add ground pepper according to taste,cook until the gravy reduces and thickens.
9.After the gravy thickens, turn off the stove, add the leek pieces.
I also added chopped tomatoes on top, to add freshness to the tofu semur.
The result
Tofu semur with chunks of green beans which is rich in taste.
Tofu semur/stew with a sweet and spicy taste can be used as a breakfast, lunch or dinner menu. More delicious. Enjoy it warm with warm rice. The taste of soft tofu with a gravy full of spices, feels warm to the body, Tofu stew is a dish that can be used as a diet menu.
