Javanese Red and White Porridge For Safety

Hello Vegan Lovers,today I will share a typical Javanese porridge recipe, the name is red and white porridge. Red and white porridge is porridge made as a way to reject bad luck in life and as an expression of gratitude to God Almighty for giving health, good sustenance, abundant harvests and other expressions of gratitude. Red and white porridge is usually made on birthdays, births, traditional parties, harvest celebrations and other traditional events that symbolize gratitude.
This porridge is actually brown and white, but because it uses brown sugar, it is called red and white porridge.

The main ingredient for making red and white porridge is rice. His philosophy is rice as a symbol of prosperity and fertility. In addition, traditional Javanese people always use pandan leaves to make red and white porridge. The distinctive aroma of pandan leaves will seep into the porridge and add to the delicacy of the porridge. So before making the porridge, I will take pandan leaves in the garden.

The ingredients needed to make red and white porridge are:

300 mL white rice
1 L water to boil rice
150 grams brown sugar
2 tablespoons sugar
1 teaspoon salt
700 mL Coconut milk from 1/2 coconut
3 pandan leaves, if not there can be replaced with vanilla powder.

How to make red and white porridge requires patience because there is one part that is cooked over low heat to maintain the deliciousness of the porridge. How to cook red and white porridge is :

1.First I washed the rice while choosing the rice, sometimes there is rice grain left in the rice, we have to throw away the grain.

2.Enter the rice that has been selected and washed into the water.

3.Add pandan leaves.

4.Cook the rice until it becomes soft, when cooking use medium heat and stir frequently so that the porridge does not burn.

5.After the rice becomes soft and the amount of water reduces, add only half of the coconut milk or about 400 mL, because the other half will be used to make a red porridge.

6.Add salt and sugar, then cook until the porridge is soft and the water content is reduced. Cook over medium heat, the smell of coconut milk blends with pandan leaves. The children go back and forth to the kitchen to ask if the porridge is cooked😅

7.Cook while stirring so it doesn't burn at the bottom of the pan. After the coconut milk content is reduced and the porridge has cooked, reduce the stove, then take a bowl of white porridge, cook the rest of the porridge over low heat.

8.Cook back half of the porridge over low heat, add the brown sugar to the pan containing the porridge.

9.Put the rest of the coconut milk into the pot containing the porridge and brown sugar.

9.Cook the brown porridge until the coconut milk is reduced.

10.It looks like the brown/red porridge is already cooked, I'll remove it from the pot.

How to serve red and white porridge
First put the red porridge into the plate.
