VEGAN HEALTHY FALL MIX

Vegetables are my favourite ingridients for all dishes. And one of my favourite examples are Fall Mix that I cook rather often.

Vegans are fond of it because it's healthy and doesn't contain meat, and meat lovers can add the recipe by adding some meat to it, do matter, it will be delicious!

We need rather much vegetables for this dish, but they are rather cheap now, that's why it's not a problem.

We need:

eggplant - 3 pieces (400g)
cauliflower - 300g
onion - 3 pieces (250g)
potatoes - 12 pieces (1 kg)
green beans - 300g

The amount of them is up to you and your taste, and amount of hungry family members;))

Peel and cut all ingridients, and it demands most time in this recipe;)

Eggplants should be soaked fin very salt water for 15 min to remove bitterness.

Couliflower is my son's task, as a rule he divides it into small pieces

Cut potatoes and add spices and salt + some turmeric to make it super sunny yellow;)

Then we just put all ingridients in the frying pan creating layers. The first one is onion, all the rest are up to you.

Cover your pans and wait for 30-40 min.

Add some greenery and eat:)
