Traditional Vegetable Urap | Plant-based Cooking Challenge #31.

Today I present a simple menu that is healthy for the family at home, the side dish for lunch is Vegetable Urap which is a traditional Indonesian food. This food is made from several vegetables accompanied by natural spices.

This time, I cooked vegetable urap in a very simple but very delicious way, the way to serve this food is very easy, but to finish this dish it takes a long process.

Some of the ingredients for cooking vegetable urap I got in the garden behind the house, the spices I picked straight from the garden were cayenne pepper and lime leaves. The rest of the spices I bought at the nearest market.

On this occasion I will share the recipe and how to process vegetable urap, my writing is at the same time to take part in the #31 plantbased cooking challenge which is held every week by @justinparke.

Here's a recipe and how to process traditional vegetable urap.

Ingredients :
Coconut.
Spinach.
Carrot.
Long beans.
Bean sprouts.
Red onion.
Garlic.
Red chili pepper.
Cayenne pepper.
Aromatic ginger.
Lime leaves.
Brown sugar.
Sugar.
Salt.
Shrimp paste.
Water.
Vegetable oil.

Prepare the ingredients or vegetables and spices as needed, all prepared according to how much food will be cooked.

How to process urap vegetable food:

First wash the vegetables and natural spices until clean. Grate the coconut until done, choose a medium coconut, not too young and not too old.

The next step is to slice the vegetables as needed, then prepare the spices to be processed into cooking spices. Puree the onion, garlic, cayenne pepper, red chili, kencur, lime leaves and add sugar, brown sugar, salt and shrimp paste to taste. Puree the spices until they are finished and become cooking spices for vegetable urap foods.

The next thing is to boil the water and then boil the vegetables such as spinach, long beans, carrots, and bean sprouts. Boil until cooked then drain and set aside for a while.

After that, heat the vegetable oil using a cooking pot, then add the ground spices, stir-fry the spices until cooked. After the seasoning is cooked and smells good, then add the grated coconut, stir-fry until cooked. Saute until completely dry so that the food does not go stale and lasts a long time.

Next, put the vegetables into the cooking pot, stir the food until evenly distributed, stir the food continuously until the spices and grated coconut seep into the vegetables. Do this process until it is finished, if it is finished then serve the food in a food container and serve it on the dining table to eat. Then the food processing process is complete.

Vegetable Urap is a traditional food originating from Indonesia, this food has been consumed by the people there for a long time. Foods made from vegetables and natural spices are very good for daily consumption for health, these foods are also very easy to find in several Southeast Asian countries.
