Ingredients

3 - 4 red onion, chopped

2 pod of Garlic , chopped

1/2 head of cabbage, chopped

2 carrots, chopped

1/2 cup of green beans, chopped

1 capcicum chopped

1 tomatoes, chopped

1/2 cup of kidney beans

1 teaspoon of curry leaves , seraa little

Salt and pepper, to taste

Instructions:

Wash and chop the onions, cabbage, carrots, green beans, capcicum, tomatoes, and any other vegetables of your choice.

In a large pan, add 1/2 cup of water and bring it to a boil. Once the water is boiling, add the chopped carrots and green beans and let it cook for 2-3 minutes.

Next, add the chopped cabbage, capcicum, tomatoes, and curry leaves. Sprinkle with salt and pepper and stir occasionally for about 5 minutes or until the vegetables become just barely tender.

While the vegetables are cooking, open the kidney beans can according to the package instructions.

Once the vegetables are cooked, add the cooked kidney beans with their sauce into the pan. Stir well and heat until the sauce thickens. Finally you can add tomato sauce a little if you want.

Now serve the vegetable chop suey over rice, noodles, or chow mein noodles.
