Vegan pumpkin spice bites πŸ‚

Last recipe with pumpkins this season! And it is a dessert, which most of us love 🀀

I previously shared a recipe of pumpkin gnocchi and in there you would need pumpkin puree. So if you made some more, you can use the puree in this recipe as well!

These balls are of similar taste to pumpkin pie except you don't need to bake anything and it takes about 20 minutes to make 😍

You can also add any additional spices of your choice. Such snack is always a good way to consume some nutritional ingredients in a tasty way. In this case I added chia seeds, oats, pumpkin puree and all of it is very healthy and good for your body πŸ’›

You may want to make the bites a bit sweeter so before rolling them into balls taste if you need any additional sweetener such as more maple syrup or other. πŸ‚

You will need:
for about 14 balls

  • 70 g. pumpkin puree
  • 60 ml. maple syrup
  • 80 gr. peanut butter
  • 70 g. rolled oats
  • 1 teaspoon of chia seeds
  • 0.5 teaspoon of cinnamon
  • 0.5 teaspoon of ground cloves
  • 0.5 teaspoon of ground ginger
  • ΒΌ teaspoon of ground nutmeg
  • A pinch of pepper
  • 10-15 g. coconut flour (not necessary if the dough is firm enough to form balls)

Preparation

  1. If you want to make homemade pumpkin puree check out my previous recipe of pumpkin gnocchi where I show you how to make the pumpkin puree from scratch! It is here: pumpkin gnocchi.
  2. Start by blending the oats with a hand blender or food processor until they are all grounded but not not quite the consistency of flour yet. Set them aside.
  3. Mix the wet ingredients (peanut butter, maple syrup, pumpkin puree) until smooth.

    Then add all the remaining ingredients (oats, chia seeds and all the spices), except coconut flour, and mix it well with a fork. If the mixture is thick enough you can also knead it with your hands.

    If the mixture is too liquid to form balls, add a little bit of coconut flour or more grounded oats until it can be formed into balls. I added about 10-15 grams of coconut flour but the balls turned out a bit too solid so before adding additional flour leave the mixture to rest for a few minutes as it should also thicken by itself.
    Don't forget to taste whether you need more sweetness and add some more maple syrup or other sweetener if needed.
  4. Form small balls with your hands (approximately 1 teaspoon of mixture for each ball). Take 1 teaspoon of the mixture and roll it into a ball in your palms.

    Once kept in the refrigerator, the balls will harden a little more as well.
