Vegan mayonnaise from aquafaba šŸ‘©ā€šŸ³

It is very popular to make vegan mayo from aquafaba (liquid from chickpeas can) and nevertheless it has never worked for me - I was always left with watery strange consistency that was no where to be used šŸ˜ž
Until recently I realized I was mixing everything wrong šŸ¤¦ā€ā™€ļø

ā• The most important thing after you pour all the ingredients to your mixing bowl/utensil is to place in the mixer (I use hand mixer) super slowly and let everything to settle down for a few seconds. After that start mixing without moving and only when the bottom part is thick (after 1-1,5 min. of mixing) start moving upwards. ā¬†ļø
Is it only me who didn't know how it is done?? šŸ˜…

For the mayo (~270g) you will need:

  • 200ml rapeseed oil (or sunflower)
  • 7g apple vinegar
  • 65ml aquafaba (liquid from chickpeas can)
  • 15g mustard
  • 7g fresh lemon juice
  • Sprinkle of salt

For the instructions just put everything in a bowl and as written above place the mixer in very slowly and mix the bottom without moving - move upwards only when the bottom gets thick and mix everything until everything is thick.
