Vegan banana ice-cream popsicles / with peanut butter filling 🥜

Treat yourself this summer with healthy vegan and tasty ice-cream! ☀️

And today let's try out a different recipe for vegan ice-cream 🍦

I love this recipe as all the ingredients are healthy and natural. Of course, chocolate contains sugars but dark chocolate is still much better than many other chocolates and sweets. I'm not a dietitian but from what I read, it contains antioxidants and different beneficial minerals but always check the labels and buy a chocolate with a high cacao content (70% and more) if you are looking for healthy options.

You will only need 4 simple ingredients that I'm sure most of you already have them at your pantries.

And the process is very simple!

Feel free to upgrade this recipe by adding shredded coconut, small pieces of nuts or other additives to the chocolate coating.

For 4 popsicles you will need:

  • 2 ripe bananas
  • 100 g. dark chocolate
  • 30 g. peanut butter (smooth)
  • 1 teaspoon of coconut oil
  • 4 wooden sticks for ice cream (or simple wooden skewers after shortening them with scissors)

Don't worry if you don't have special wooden sticks for ice-cream - as you can see in the video, simple wooden sticks worked just fine for me.

Also, you can experiment with different chocolates for this. It is not so easy to find different vegan chocolates in my country and they cost crazy money, but if you are more lucky and can get your hands on different chocolates, I'm sure these banana popsicles would work perfectly with some vegan "milk" or other chocolates. 😍

When your popsicles are ready you can store them in the freezer for a longer period of time. After taking it out of the freezer, let it cool for about 5 minutes in room temperature so that you are not eating a piece of solid ice 😅
