Siamese pumpkin shoots grow in highland areas that have cold temperatures. Usually these pumpkin shoots are taken in the Takengon area which is not far from the city where I live. In the area of ​​origin of this vegetable, many ignore this vegetable and even grow wild near people's homes. However, many people also like this green vegetable.

Including myself, I really like it, even often make anything from this vegetable. Including cooking it with noodles though, and it's very good. I'm sure people who don't like green vegetables definitely don't understand how to prepare these vegetables. In fact, if this vegetable is processed properly, surely in its own way it will be very tasty. Here I will teach you how to prepare this delicious vegetable, and of course it is very suitable to be enjoyed with hot rice at your lunch.


I got these vegetables at the market a few days ago, a seller from Takengon town was selling them on the side of the road in the area where I live. They sell 2 bunches for IDR 5,000, quite cheap, and almost on par with other green vegetables. I bought 2 bunches of those vegetables and immediately prepared the marinade. Now this vegetable itself, has a very soft taste even though it looks like a hard stem. But when cooked, the texture is very soft, not even rough at all.




Ingredients

1 bunch of chayote leaves
1 tomato
9 bird's eye chilies
4 shallots
2 green chilies
1 teaspoon of salt
1 hazelnut (optional)
1 teaspoon mushroom stock (opsional)




Procedure Cooking


Cut the prepared pumpkin shoots to the size you like.

Then grind the other spices, shallots, tomatoes and cayenne pepper.

Then stir-fry the spices that have been mashed with a little cooking oil.

Sauté until fragrant, and the spices don't smell of chili anymore, then add the chopped green chilies.

Add chopped vegetables, stir until evenly distributed.

After half wilted, add mushroom stock and salt, and then to correct the taste and stir-fry until the vegetables are cooked.

I'd also like to say this serving dish is a favorite in our house. Even though it was very easy for us to find this vegetable, because we got a lot of this vegetable when my father worked in the highland city area. As I said above, this vegetable can only grow in highlands with cold temperatures. And it's very different from the weather in the area where I live. That's why this vegetable is rarely cultivated in our area.
