How to Prepare Purple Sweet Potato Porridge Easily

The sweet potato porridge dish is one of my favorite categories of porridge. For some reason I really like sweet potatoes with any color variant of them, because in my opinion, sweet potatoes are very tempting and always spoil my tongue. No wonder sweet potatoes always appear in every choice of my daily menu, you know they always steal my attention when I shop at the market, as a result they enter my shopping cart, lol.

Porridge always tells a different story in every bowl of my presentation. Making this breakfast porridge has to be dramatic, planning to make my morning one portion, but because after making this dish, I shared it with my friend, because he said it was very tempting, and he was very hungry, so I only got half of the bowl. But seeing him devour half of my share quickly, one could say, that he wanted it and I believe to be more precise. Leaving the story of my friend who ate half of my bowl of porridge let's start to prepare this dish.

Purple Sweet Potato Porridge

Purple sweet potato porridge is a porridge made from fresh sweet potato, then doused with thick and soft fresh coconut milk. Besides that, it's easy and quick to prepare as your breakfast or dessert. The sweet potato chunks and the rich coconut milk fla combine to elevate the sweet potato flavor.

Ingredients Used

3 purple sweet potatoes
1 tablespoon cornstarch
100 ml coconut milk
2 pandan leaves
1 teaspoon salt
2 tablespoons of sugar

Preparatory Steps

Step 1

To start preparing the soft and creamy sweet potato porridge, I first started peeling then washing and diced the sweet potato or according to your taste.

Step 2

Then, heat the water in a pan and boil the sweet potatoes until they are completely cooked.
Add a teaspoon of salt, and to taste sugar.

Step 3

Boil for 20 minutes or until the sweet potato is really soft, then add 1 pandan leaf, don't forget to adjust the taste, after it is cooked, remove it in a bowl.

Step 4

Next, I started to make coconut milk fla by adding a spoonful of cornstarch, then add coconut milk and stir until evenly distributed.

Step 5

Cook the coconut milk fla, and then add the salt, and one pandan leaf. Then cook until the coconut milk really thickens and has a creamy texture.

Serving Suggestions

Sweet potato porridge, ready to be served, by pouring coconut milk over the sweet potato soup that has been prepared in a bowl. Now you can enjoy the porridge slowly. Serve while cold or warm both have a distinctive taste, so it is very good to enjoy in any condition. For the taste of this porridge, there is no doubt that the sweet potato has a very soft texture, with a savory and creamy coconut milk fla.
