The rainy season is not over yet, the cold weather living in a remote village makes the body feel less fit every day. Intake of dishes that can warm the body is the right choice this time. I thought for a moment what is delicious for days like this, my choice of Soup, well Broccoli Soup with a combination of ear mushrooms which is the right choice this time, why? Because besides having a delicious taste, broccoli is one of the vegetables that is in great demand by many people. Including me, I really enjoy having broccoli for my daily meal.
Stir-fried, fried, boiled, everything is delicious. I always consider broccoli to be the queen of vegetables, because it has always been the number 1 choice in my family. Well besides broccoli I want to add mushrooms in this dish. The mushroom I chose was ear mushroom, this type of mushroom can always replace meat for me. And one more ear mushroom is also my nephew's favorite, he is even willing to boil this mushroom, without a mixture of other ingredients to make it as a side dish, it's weird but well that's the taste of each he really likes this type of mushroom.
Materials Used
The main ingredients
- 300 grams of broccoli
- 3 heads of dried ear mushrooms
- 1 carrot
- 1 tomato
- 3 sprigs of celery
Softened seasoning
- 2 Spring onions
- 2 cloves of garlic
- 1 star anise
- Half a grain of star anise
- Half a teaspoon of pepper
Cooking Preparation
Step 1
I started chopping broccoli, soaked in salt water, then cut the carrots into small pieces, then cut the tomatoes and celery into pieces according to your taste.
Step 2
Then I soak the dried ear mushrooms into hot water for about 5 minutes, after soaking then cut into several parts.
Step 3
Next, prepare the ground spices then blend until completely smooth using a blender or manual. Then stir-fry the ground spices, in a little cooking oil, stir-fry until the spices release a fragrant aroma or the water content in the spices begins to shrink.
Step 4
After the spices are stir-fried, add 1 liter of water, then add one tablespoon of salt and mushroom broth. Here I also add a whole star anise so that the aroma is more perfect.
Step 5
Cook until the water boils evenly and perfectly, then add the carrots and then, the ear mushrooms.
Step 6
Then add the broccoli, cook for a while until the vegetables start to soften, or are half cooked. Don't forget to stir the vegetables so they cook evenly.
Step 7
Then finally add the celery and tomato pieces, cook for a while until everything is wilted, stir and serve in your favorite bowl.
