Hi my fellow Vegan food lovers,
Greetings from Sri Lanka. It is a relaxing task to think that another Sunday has dawned because it is the only holiday of the week. So when I was thinking about a suitable vegetable dish to have with rice for lunch on this relaxing Sunday, Lady fingers came to mind. Sri Lankan Tamils add a lot of spices in cooking. I prepared Lady fingers curry today by adding more spices. Lady fingers are also a beneficial vegetable for our physical health.
Ingredients
- 200 grams of lady fingers
- One cup of coconut milk
- Three tablespoons of oil
- Pandan leaves and curry leaves
- Three chopped green chilies
- Three pieces of dry cinnamon
- Chopped tomatoes
- Chopped onions
- Chopped garlic
- Crushed ginger
- Half a teaspoon of pepper powder
- A teaspoon of chili powder
- A teaspoon of raw curry powder
- Half a teaspoon of mustard seeds
- 1/4 teaspoon of turmeric powder
- Half a teaspoon of fenugreek
- Salt to taste
Preparing method
- Wash the lady fingers pods well and cut them into small pieces. There is no problem if it is cut to a desired shape. Keep it separate.
- Place a pot on the stove and add a tablespoon of oil. When the oil heats up, add the chopped lady fingers pieces and stir well for about three minutes. Then put the okra in a separate dish.
- While the pot is still on the stove, add the remaining oil and when hot, add the mustard seeds. When those mustard seeds pop, add fenugreek. Then add cinnamon pieces, pandan leaves and curry leaves and fry.
- Next add chopped garlic, crushed ginger, chopped onion and chopped green chillies respectively.
- After that add turmeric powder, chilli powder, raw curry powder and pepper powder.
- Then add salt as needed and mix. Add chopped tomatoes to it and fry for about a minute. Then add the coconut milk and after some time add the fried lady fingers pieces and after two minutes take it off the stove.
