What's gu guys? Greetings from Sri Lanka. After one week I came back to posting on Hive because I spent much busy time of my professional working. After a long time, I got a chance to go to my mother-in-law's house because yesterday was Poya Day. On that relaxing day, I left early in the morning for my mother-in-law's house, which is nearly 50 kilometers away from our house. Especially I prefer to go there because she gives us some natural vegetables and spices. The vegetables grown in this garden, grown using only compost, are nutritious. Adding them to our diet is beneficial for our health.
So, during yesterday's journey, I had the opportunity to save pennyworts, which Sri Lankans call Gotukola in Sinhala, as mulch. Pennyworts, which have very medicinal properties, are a type of leaf that spreads in the ground as vines and small plants. It is good to eat raw sambal and salad. But this time I wanted to make a difference. Boil the pennyworts for a short period of time on low heat and make a temper after adding some ingredients.
Ingredients
- One bundle of pennyworts
- Two tablespoon of oil for frying
- Chopped green chilies
- Curry leaves and chopped pandan leaves
- Three spikes of dried chilies
- One teaspoon of mustard seeds
- Two teaspoons of chili pieces
- Salt as needed
- Chopped big onion
- Chopped garlic
- Chopped tomatoes
- Three pieces of dried cinnoman
- Lime juice
preparing steps
- First, wash and clean the pennyworts. These have to be washed more than twice as their roots contain soil, sand etc. Also the roots of pennyworts should be removed.
- After that, the pennyworts should be lined up and cut into slightly larger pieces. Put it in a bowl.
- After that, I added two teaspoons of chili pieces. Add as much salt as needed, mix well and keep aside.
- Heat a pan and add oil. When the oil heats, add mustard seeds and splutter. Add crushed dry chillies to it. Add cinnamon pieces and fry.
- Then add chopped big onion, chopped garlic, curry leaves, chopped pandan leaves and chopped green chilies and mix well with a spoon and fry for two minutes.
- After the mixture is fried well, add the chopped tomatoes and fry till they wilt slightly. Then add chili pieces and salt and add the mashed pennyworts and mix. Boil it on low flame stirring for about two minutes and remove it from the stove. Finally add little bit lime juice.
