During the winter season, we get various green vegetables that are very useful for our health, and spinach is rich in various nutrients such as vitamins, calcium, magnesium, and iron, which are essential for everyone


.# Ingredients
To make this, I need the following ingredients:

  • Spinach: 500 grams
  • Water chestnut: 100 grams
  • Peas: 50 grams
  • Eggplant: 100 grams
  • Tomatoes: 100 grams
  • Red chili: 6
  • Garlic: 1 clove

Instructions

  1. First, clean and cut the spinach into pieces.

  2. Peel and cut the water chestnut into pieces.

  3. Clean and cut the eggplant into small pieces.

  4. Finely chop garlic and chili.

Cooking

  1. Heat oil in a pan, add chopped chili and garlic. Once they are brown, add spinach and water chestnut. Also, add peas, eggplant, tomato ,and mix well. Cook on high heat for 5-6 minutes.

  1. Check the water chestnut for doneness and turn off the heat.

  2. Your mixed greens are ready. Serve with naan, roti, or rice.
