Alu Palak Curry. (Spinach And Potato curry)

Aloo Palak is a simple and flavorful gravy made with potatoes and spinach. I tried it for the first time in Patnitop, and it tasted delicious. When I came home, I attempted to recreate it, but it didn't turn out exactly as I had tasted. I tried again, and now it's just as tasty as we had it there. This recipe is loved by my kids, husband, and everyone. I hope you all like it too. It takes 30 minutes to prepare.

Ingredients:

  • Spinach: 1 bunch
  • Potatoes: Small, diced
  • Onions: 2 or 3
  • Ginger: 1 small piece
  • Some garlic cloves
  • Red chili powder: 1/4 teaspoon
  • Coriander powder: 1/4 teaspoon
  • Garam masala: 1/4 teaspoon
  • Turmeric powder: 1/2 teaspoon
  • Salt: As needed

Spinach is beneficial for our health as it contains calories, protein, carbohydrates, fats, fiber, and mineral salts. Additionally, spinach is rich in various minerals such as calcium, magnesium, iron, and vitamins like A, B, C, etc. Therefore, spinach is beneficial for our health.

Cooking Method:

  1. Wash the spinach leaves thoroughly and remove the stems.

  1. Cook the spinach in a pressure cooker, let it cool, and then blend it into a puree.

  1. . Peel and wash the potatoes, then cut them into two pieces.
    4 . In a pan, heat oil, add the potatoes, and fry them until golden brown. Set aside.

  1. In the same pan, add more oil and fry the onion paste for 5 minutes.

  1. Add the spices - turmeric powder, coriander powder, red chili powder, garam masala, and mix well.

  1. Add the spinach puree, mix, and let it cook for 2 minutes.

  1. Finally, add the fried potatoes, mix, and let it simmer for 2 more minutes.
  1. Aloo Palak is ready to be served. Enjoy it with naan, roti, rice, pulao, or jeera rice. It's very tasty.
