Qurator's: Hive Top Chef! | Puff Pastry

Hello, and greetings to all food lovers. Today I made some non-traditional puff pastry for @qurator's Hive top-chef puff pastry. I learned Since living in the western county the puff pastry needs butter, eggs, or any dairy product and an oven is important. But in my childhood when big festivals like Diwali my mother was making this kind of sweet which one similar to or can say the same as pastry but in India, we use a lot of ghee the clarified butter.
Today that vegan version of puff pastry sweet and savory ( I don't remember the name of that sweet) I made for this contest. hope you will like it. It is fried things mostly we don't like so much fried food but once while I think it is ok.

The crispy puffed and flaky puff pastry Indian version.

Sweet and savory puff pastry snacks.


making pastry:
2 cups of white flour
1/3 cup of oil I used sunflower.
1tsp baking powder
3/4 tsp salt
1/2 cup water.

Put salt in the water and stir until dissolved.
Add baking powder to the flour
Then oil into the flour.
Mix oil and flour thoroughly.

When making a fist with oily flour it will form a ball.
Gradually adding salty water to make a dough

I used 1/2 cup of water. cover the dough and keep it aside.

Making oil slurry to make layers:

3 tbsp potato starch or corn starch
7-8 tsp oil.

3 tbsp potato starch add 8 tsp oil in and stir it to get a nice thick slurry that looks like melted butter.

Divide the dough into small balls.
Roll them as thin as possible.
spread the slurry made with oil and potato starch on each rolled dough.
Layer the thinly rolled dough on each other adding the slurry to each.

After 6 thinly rolled doughs sprinkle a little flour on the top one.
Carefully roll them together into a many-layered dough roll.


Cut the roll into small slices.
Press each slice using a finger. the layers can hold inside.
Roll these into small strips

Made savory version using coriander seeds, cumin, salt, and black pepper powder.


Heat oil in a pan.
When oil gets hot fry them.
and flip them over.
press the middle to open the layers.
fry until get golden color.


One more time.
in the hot oil put two strips.
flip
and using the forks open the layer while frying.
can see how crispy they are I checked one before they get sugar syrup.

Here is puff pastry which will get sugar syrup

In a saucepan add 1/2 cup sugar and 1/2 cup water add 2-3 crushed cardamom in and cook until sugar melts.3-4minutes.

After the puff became cool, coat evenly with the sugar syrup.
