Qurator's: Hive Top Chef! | Seasoned Rice

Hello, food lovers greetings today presenting my rice recipe called lemon rice or Bisi Belli anna.. this is the south Indian way of making this seasoned rice. Where I grew up. Mostly it is made with leftover rice and used for breakfast or lunch. Here I presenting this recipe for qurator hive top-chef theme seasoned rice.


I gave it a more western look with some zucchini and red bell pepper for decoration


Normally it is like this.


ingredients:
1 cup basmati rice,
1 tbsp roasted split grams.
1/3 tsp turmeric powder
1 pinch of asafoetida (hing)
1 lime
around 15 cashew
1 tbsp raw peanuts
1 tbsp mustard seed
2 tbsp cooking oil
1 small zucchini
1/2 red paprika sliced and chopped.
1 hot green chili
1/2 cup finely chopped green beans
2 spring onion
10 sweet peas
1 tbsp chopped coriander
2 stalks of dill and wild red currant for decoration.


Mostly finely chopped all vegetables but zucchini and red paprika are sliced


Wash and soak rice 1/2 an hour. (or use leftover cooked rice.) After 1/2 hour drain the water from the rice. In a saucepan boil water with 1/2 tsp salt. Add the washed rice. Cook rice until 95% done. Drain the water from the rice using a strainer.


Now add 1/2 lime juice. then 1 tsp salt and 1/2 tsp turmeric. Mix it well.


In another saucepan heat 1 tbsp cooking oil. when warm add hing and mustard seeds to it. When mustard seeds start to pop add the chopped spring onion and the hot green chili.


In India, we used lots of chilis in this dish. but here we don't. I discard the chili after it starts spicy smoke. Add green beans, stir it for three minutes. add sweet peas and paprika or any other vegetables.


After the vegetables turn soft, add rice mixed with lime juice, salt and turmeric.


In a different saucepan heat 1/2 tbsp oil. add a pinch of asafoetida to it. add peanuts, then cashews, then split chickpeas.


Stir it until they get roasted. Avoid burning. add the chopped fresh coriander. then pour this mixture into the yellow rice. Mix it very softly. add the juice from the remaining half lime along with a pinch of sugar to get a sour tangy taste to the rice.


Add some spring onions green at the end.


Here is the lemon rice ready I understand that only because of the yellow color it is called lemon rice. we mostly use lime in Indian food.


For a more western taste, I used zucchini. sautee the slices of zucchini with a little oil.


then lightly sautee some slices of red paprika.


Here is our lemon rice / Bisibeli Anna / is ready!
