Hello, dear vegan community greetings🙏. here is my dinner for Monday Indian Dal and rice. with carrot and ginger soup and chili pakora (flitters)

Making carrot and ginger soup

Ingredients:
2 cup grated carrot
1 small onion
1 tbsp chopped fresh ginger
1 tsp salt
1/2 tsp black pepper powder.
2 tsp grated frozen lemon
1 tbsp pumpkin seeds
1 tbsp olive or any cooking oil.
2 tsp cilantro or fresh coriander chopped.

Heat the oil in the pan and fry the pumpkin seeds. keep them aside. In the same oil add chopped fresh ginger saving a few pieces. stir until aromatic then add the onion slices. stir it until the onion becomes translucent.

add the grated carrot and stir it for 2-3 minutes add the salt and black pepper. then 2-3 cups of water and let it cook for 5 minutes. use the immersion blender to make a smooth paste.

add saved ginger pieces and chopped coriander and frozen grated lemon. serve with pumpkin seeds on top

Dal (split red lentil )soup

Masoor dal split red lentils.

ingredients:

1 cup red split lentils
1 small onion
2 tomatoes
1 medium potato.
1 tsp salt 1/2 tsp turmeric, 1/2 tsp black pepper powder.
2 tsp cooking oil, 1 tsp mustard seeds, 1 tsp cumin seed
2 pinches of asafoetida.

wash the dal 2-3 times. put in a pot along with the chopped tomatoes, potato, and onion. add water and boil. remove the foam that forms as it produces gas in the stomach.

After 10 minutes the dal is cooked. add turmeric, salt, and pepper.
add chopped coriander. cook it for 2 minutes. dal is almost ready.

in a separate pan heat 2 tsp oil and add asafoetida powder, mustard seeds, and cumin seeds. when they start to crackle pour this into the cooked dal. our dal is ready. serve with rice and turmeric pickle. can also serve as soup.

Chili pakora ( flitters)
ingredients:

3 mild green chilis.
1 cup of chickpea flour
1 tbsp corn starch
1/2 tsp baking soda
1/2 tsp cumin seeds
1/2+ 1/2 tsp salt
cooking oil for deep frying.

split the chilies in half and rub in 1/2 tsp salt. set aside.
now mix all dry ingredients and gradually add just enough water to make a sticky batter.

Heat the oil in the pan. dip the chili pieces in the batter and very carefully drop them in the hopt oil and fry them on medium heat. our pakoras are ready.
enjoy rice, dal, and pakora. and turmeric pickle. vegan and gluten-free. food.
