Hello, food lovers and friends, today I took the challenge from @qurator top hive chef theme mint. Mint is an ingredient that is used for dessert or drinks in the Western world but in Indian cuisine, we use it also for dips, garnish, chutneys, and teas, as well as an herb in several savory dishes.
Today I made an experiment using it in cauliflower rice. not real rice but making cauliflower to be like rice. so good for keto diets.
Ingredients:
! cauliflower
1 carrot
10 cherry tomatoes
1 white onion
1 yellow paprika
1/2 small onion
2 garlic clove
2 cm ginger
2 tsp oil
1 tsp salt
1/2 tsp black pepper
1 handful of fresh mint picked from the garden
Making mint blend
Mint
3 garlic cloves
1 green chili
1/4 cup roasted chickpeas
4 pieces of cut onion
1 slice of lemon
1/2 tsp salt
2 cm ginger
In a mixer put one by one all ingredients for the mint blend.
cleaned mint stems and added them to the mixer. juiced lemon slice.
Run the mixer and the fine paste is ready.
Kept the paste aside.
Washed and grated cauliflower.
Crushed garlic, ginger, and a small piece of red onion.
Chopped Paprika, onion, carrot, and 1 tbsp parsley.
Added oil in an iron skillet and stirred crushed paste and chopped onion. On medium heat cooked it for 2 minutes until the onion got softer. Then stirred paprika and carrot into the skillet. Stirred for 1 minute and sprinkled salt and pepper in.
Now stirred in grated cauliflower and mixed mint paste in thoroughly.
Squeezed lemon juice over.
and sprinkled chopped parsley.
The cauliflower rice with mint.
Made cross cut in cherry tomatoes and filled mint paste into them.
These are minty tomatoes I used to garnish cauliflower rice. as well as a salad.
After dinner, we had cucumber mint slush.

blended in a fine paste.

Filled mold and freeze.
