The epic mushroom burger made from scratch

Hello, my dear vegan friends from Hive!

Today is Saturday and I was dying for a burger. Yes, a juicy and delicious burger, you know? However, it wasn't quite any burger that I was craving. All I wanted was a Cheddar Mcmelt, a burger sold by Mcdonald's only in Brazil.

However, we all know that Mcdonald's is not one of the healthiest options and, at least here in Brazil, they don't sell any kind of vegetarian burger. So, what did I do? Simple! I made my own vegan Cheddar Mcmelt!

I think from the pictures I don't even need to say that it was amazing! And in this post, I want to share this wonderful recipe for those who are craving a burger this Saturday! Let's go to the recipe.

Ingredients (1 person)

For the burger, you'll need

2 cloves of garlic
Ā½ bunch of spring onions
3 large portobello mushrooms
4 large shitake mushrooms
1 tablespoon soy sauce
olive oil
1 hamburger bun or an old bread you have been saving

For the cheddar "cheese" you will need
2 large boiled potatoes
Ā¼ cup olive oil
Ā½ lemon
salt
1 teaspoon turmeric

Onion sauce
1 onion
5 tablespoons soy sauce
1 tablespoon cornstarch

How to make it?

First, let's start by preparing the hamburger. For that, you need to chop the mushrooms and garlic. Then, put olive oil in a pan, and pour the garlic and the mushrooms. Finally, add half a bunch of chopped spring onions and lastly the soy sauce. Cover the pan and wait for the mushrooms to wilt.

While the mushrooms are getting soft, in a frying pan put the hamburger bread or some slices of old bread you have at home and toast them.

Use bread crumbs to make your burger better!

When they are crispy, take the slices of bread to the blender and beat them until they form a fluffy mixture, then set them aside.

To make bread crumbs from the burger bread is simple! Just toast it and put it into the mixer

Next, remove all the water from the mushrooms and put them in the blender. Blend them until they become a paste, but not too liquid. The idea is to keep some small pieces of mushroom.

Now add the bread crumbs to this mushroom paste, add more parsley if you want (I recommend it!). Mix it all with a fork until it forms a firm paste and take it to the fridge. In case the mushrooms are too wet, you can add some more bread crumbs until you get the consistency. Leave it in the fridge while you make the other parts of the recipe.

Using bread flour to give this burger an alloy is a super tip! Many veggie burgers use vegetable flour in the recipe, but sometimes they end up being too floury. The bread ends up giving texture to the burger without that happening!

Now let's go to the cheddar! I already explained how to make this creamy cheese in my vegan Mac'n'Cheese recipe. However, in this recipe, I will use only potatoes. First, put them to cook. Remove the peel and then put them in the blender. Add half a lemon, salt to taste, and 1 teaspoon of turmeric. Add the olive oil little by little and let it beat until it becomes like cheese. Wow, it's amazing!

Before making the onion sauce, my suggestion is to already prepare the burgers. That's because the onion sauce ends up thickening too much if it stays in the pan. So, the idea is to make it and pour it on the sandwich.

Take the hamburger dough from the fridge and mold the hamburgers. You can do that with your hands, or with a special mold like the one I have.

Let a hot frying pan on the fire. Cut the bread in half, add a little bit of olive oil, and then pass it on the frying pan to toast it. Then, add another drizzle of olive oil and put the burger to fry. This mushroom "meat" is simply wonderful and can be used as a base for other recipes like meatballs or kebabs.

Fry the burger, put it on the bread, and pour the cheddar on top! Hummmm is already delicious!

Now slice the onion, put it in a pan with hot olive oil and let it brown. When they are golden brown, add the soy sauce and a spoonful of cornstarch, which helps to give a creamy texture to the sauce.

Pour it hot over the burger and now just taste it!
