Easy peasy vegan mac’n’cheese

Laziness. Who doesn't have it, right?

We all have those days when we don't feel like doing much, even cooking! However, lazy days call for those cozy dishes that hug you from the inside and fill your stomach with love!

For those days, a mac'n'cheese is the ideal dish! And yeah you can do a super easy and fast vegan mac'n'cheese at home. Nooo, you don't need to buy any pack on the supermarket! Everything you need is some veggies and some minutes.

And the best of all? You don't need any dairy products to make a creamy, delicious, and super easy to prepare macaroni and cheese.

Ingredients (for 1 person)

all you need is love pasta and some veggies, of course

To prepare this delicious vegan mac'n'cheese you will need

1 cup of pasta of your choice (I used a gluten-free penne, but you can use whatever you prefer)
1 onion
2 cloves of garlic
½ pumpkin
4 small potatoes
1 pinch of turmeric
1 pinch of black pepper
salt to taste
½ squeezed lemon

How to prepare?

The first step in preparing this delicious vegan mac'n'cheese is to bring water and a little salt to a boil in two pots. In one pot we will cook the pasta and in the other the vegetables that will serve as a base for the sauce.

As soon as the water boils, put the peeled pumpkin and potatoes in to cook. This will take about 15 minutes. Once they are very soft, set aside.

In the same pan, saute the chopped onion and garlic with olive oil. Before adding the garlic to the saute, make sure that the onion is nicely browned. Separate this mixture.

Now it's time to put the pasta to cook. Add 1 cup as soon as the water is boiling.

While our noodles are cooking, let's start preparing the sauce! Place the onion mixture in a blender and blend it well. Gradually add the pumpkin and the potato, and a ladle of the pasta cooking water. If it becomes a puree consistency, add a little more of the cooking water.

In a blender add the juice of half a lemon, 1 teaspoon of turmeric and a pinch of black pepper. As the vegetables have already been cooked in salt water, check if there is a need to add a little more salt. The lemon helps to give the cheese a bit of a sour taste, so I think it is indispensable in this recipe. However, if you are more sensitive to the taste, add the juice little by little and see if you like the taste of the sauce.

The pasta usually cook very quickly, about eight minutes, depending on the brand. The ideal is that the pasta is "al dente" since when we add the sauce, it will stay on the heat for a few more minutes.

Remove the water from the pasta, pour it into a pan, and now it's time to add our creamy sauce! Mix it little by little and that's it! Now just serve!

To add some extra charm, I added some black sesame seeds, which not only make the dish more beautiful, but also have a high amount of calcium! The parsley also provides a special touch both in taste and aesthetics!

This pasta is super easy and quick to make! It takes absolutely no time at all and the flavor is simply amazing!

Note

In some countries mac'n'cheese is traditionally baked au gratin. I didn't do this step because I don't have an oven. However, if you want, use toasted bread flour, or simply bread crumbs on the top and put it in the preheated oven.
