Lately I have recovered a little of my tenuous gastronomic skills, for some time here at home it has been a priority to rethink our food, but we can not deny that if something we love is to eat sweets in the afternoon to rest a little of the workday. But, as we stopped eating refined sugar we decided to eat as little as possible the typical sweets and desserts that we can find in commercial establishments, and therefore I have started to investigate every day a little about healthy recipes, and with the purpose of being able to offer something healthier to my wife that thanks to her intense determination we have managed to take important steps in the care of our food.

On the other hand, I didn't know about this community and that's why I decided to share this simple recipe as my first publication in Plant Power (Vegan). I hope you like it...

Recently I was amazed with the possibility of making donuts with only two ingredients, yes, you read that right with only two ingredients and that is what I come to show you today how with only oatmeal and pumpkin you can make some delicious donuts. Although I used 3 ingredients the third one is optional. Now, without further ado, let's get to the recipe:

Ingredients:

500 g of pumpkin.
One and a half cups of oat flakes.
50 g of nuts.

Preparación

Cut the pumpkin into pieces, wash it well and remove the seeds, cook it in boiling water until it is soft. Then remove the peel from the pumpkin and in a bowl, mash the pumpkin with a fork until it is mashed and let it rest for 5 minutes.

After the time has elapsed, add the oats and mix well, then let stand for about 15 minutes so that the oats absorb the moisture from the pumpkin and form a more consistent mixture, much less.

Preheat oven to 190° Celsius

Place on a baking sheet waxed paper, in my case as I did not have waxed paper, I greased the baking sheet well to bake our donuts.

To shape the donuts, just wet your hands and make small balls with the mixture and then make a hole in the center and place them on the tray. Then to give it a special touch, I decorated the donuts with nuts, in my case I used peanuts and raisins, but you can use whatever you prefer.

Then I bake them in the oven for 20 minutes or until they are golden brown and have a crunchy texture on the outside.

Últimamente he recobrado un poco de mis tenues habilidades gastronómicas, desde hace algún tiempo acá en casa ha sido una prioridad repensar nuestra alimentación, pero no podemos negar que si algo nos encanta es poder comer dulces a media tarde para descansar un poco de la jornada laboral. Pero, como dejamos de comer azúcar refinada decidimos comer lo menos posible los típicos dulces y postres que podemos encontrar en los establecimientos comerciales, y por ello me he puesto a investigar todos los días un poco sobre recetas saludables, y con el propósito de poder ofrecerle algo más saludable a mi esposa que gracias a su intensa determinación hemos logrado dar pasos importantes en el cuidado de nuestra alimentación.

Por otro lado, no sabía de esta comunidad y es por ello que decidí compartir esta sencilla receta como mi primera publicación en Plant Power (Vegan). Espero sea de su agrado…

Recientemente quedé asombrado con la posibilidad de realizar donas con tan solo dos ingredientes, sí, lo has leído bien con tan solo dos ingredientes y es lo que vengo a mostrarles hoy como con tan solo avena y auyama puedes hacer unas ricas donas. Aunque yo usé 3 ingredientes el tercero es opcional. Ahora sí, sin más preámbulo vamos con la receta:

Ingredientes:

500 g de Auyama.
11/2 Taza de avena en hojuelas.
50 g de frutos secos.

Preparación

Cortar en trozos la auyama, lavarla bien y quitar las semillas, ponerla a cocinar en agua hirviendo hasta que esté suave. Luego remover la corteza de la auyama y en un bol aplastar con un tenedor la auyama hasta hacer un puré y dejar reposar 5 minutos.

Pasado el tiempo, incorporar la avena y mezclar bien, luego dejar reposar unos 15 minutos para que la avena absorba la humedad de la auyama y forme una mezcla más consistente y mucho menos.

Precalentar el horno a 190° Celsius

Colocar en una bandeja para horno papel encerado, en mi caso como no tenía papel encerado, engrase con bien la bandeja para hornear nuestras donas.

Para darles forma a las donas, basta con humedecer nuestras manos y hacer pequeñas bolas con la mezcla y luego hacerle el agujero del centro e ir ubicando en la bandeja. Luego para darle un toque especial, decoré las donas con frutos secos, en mi caso usé maní y uvas pasas, pero, tú puedes usar lo que prefieras.

Luego las llevo al horno durante 20 minutos o hasta que estén doradas y tengan una textura crocante en su exterior.
