I hope you are happy and healthy. Today, I will share a recipe of delicious and healthy khichadi. Khichadi, the classic comfort food of India, offers a perfect blend of rice, lentils, and vegetables, making it a nutritious and fulfilling meal. This versatile dish can be customized with various vegetables based on whatโs available, and itโs easy to prepare. In this recipe, we will guide you through making a delightful Veggies Khichadi, highlighting some key steps to enhance its flavor and texture.
Ingredients
๐1cup small-grain rice (not basmati)
๐ 1/2 cup split yellow moong dal (lentils)
๐ 1 medium-sized onion, finely chopped
๐1 medium-sized tomato, finely chopped
๐1 cup mixed vegetables (carrots, capsicum, potatoes, raw mango), chopped
๐ 1 teaspoon cumin seeds
๐ A few curry leaves
๐ 2 green chilies, slit
๐ 2 tablespoons oil
๐Salt to taste
๐Fresh coriander leaves for garnish
๐ 4-5 cups water

๐บRinse the rice and moong dal separately under running water until the water runs clear. Soak them together in water for about 15-20 minutes. Drain and set aside.
๐พ๐ค๐ค๐ ๐๐ฃ๐ ๐ฉ๐๐ ๐๐๐๐๐๐๐๐:
๐บ Heat oil in a pressure cooker over medium heat. Add the chopped onions and sautรฉ until they turn golden brown. Remove a small portion of the sautรฉed onions and set aside for garnish
๐บ In the same cooker, add cumin seeds and curry leaves. Let them splutter.
๐บAdd chopped carrots, tomatoes, capsicum, green chilies, raw.mango and potatoes. Saute the vegetables for a few minutes. (You can also add fresh beans if available. I didn't add beans.because I didn't have French beans available at the moment ) and cook for another minute until the raw smell disappears.
๐บ Add the drained rice and moong dal to the cooker. Saute for 1-2 minutes to enhance the aroma.
๐บ Pour in 5 cups of water (or 4 cups if you prefer a less liquid consistency).and add salt. And stir to combine all ingredients evenly.

๐บClose the lid of the pressure cooker and cook on medium-high heat for 1-2 whistles.
๐บ Once the pressure releases naturally, open the lid and give the khichadi a gentle stir.

๐บ Garnish with the reserved sauteed onions and freshly chopped coriander leaves. Serve hot with a side of pickle or mint chatni.
