This dish is a symphony of flavors, combining the earthiness of potatoes with the protein-packed goodness of moong dal vadi. It's hearty, comforting, and perfect for any occasion. So, let's dive right in and whip up this delectable curry together!
Ingredients
๐2 medium-sized potatoes, peeled and cubed
๐1 cup moong dal vadi (sun-dried lentil nuggets),
๐2 tablespoons oil
๐1 teaspoon cumin seeds
๐ 1 onion, finely chopped
๐2 tomatoes chopped
๐1 teaspoon turmeric powder
๐ 1 teaspoon red chili powder
๐ Salt to taste
๐ Fresh coriander leaves for garnish

First, heat oil in a pan and fry the moong dal vadi.
Then Heat oil in a pan or cooker over medium heat. Add cumin seeds and let them splutter. Add the finely chopped onions and sautรฉ until they turn golden brown.
Add the chopped tomatoes, green chilli, turmeric, salt and mix well together and cook until the tomatoes are mushy.
Add the cubed potatoes and fried moong dal vadi to the masala. Mix gently until everything is well coated with the masala.
Pour in enough water to cover the potatoes and vadi. Cover the cooker and after making one whistle, turn off the gas.or until the potatoes are tender.
Once the potatoes are cooked, sprinkle garam masala over the curry and give it a final stir.Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
