๐Ÿƒ 2 cups spinach leaves
๐Ÿƒ4 cloves garlic
๐Ÿƒ1/2 inch piece of ginger
๐Ÿƒ 1 small onion
๐Ÿƒ2 green chilies
๐Ÿƒ2 tablespoons oil
๐Ÿƒ1 teaspoon cumin seeds
๐Ÿƒ 1 tablespoon white sesame seeds
๐Ÿƒ Salt to taste
๐Ÿƒ Water as needed

๐Ÿƒ Cut the potatoes into large pieces and set them aside.

๐ŸƒBlanch the spinach leaves by boiling them briefly in water, then quickly transferring them to an ice bath. Drain the spinach and puree it in a blender until smooth.

๐™Ž๐™ฅ๐™ž๐™˜๐™š๐™จ ๐™‹๐™–๐™จ๐™ฉ๐™š:
๐Ÿƒ Make a paste using garlic, ginger, tomatoes, onion, and green chilies.

๐Ÿƒ Heat oil in a pan and add cumin seeds, allowing them to crackle.
๐Ÿƒ Add the potato pieces and fry them on high heat until they start to turn golden brown.

๐ŸƒStir in the prepared garlic, ginger, onion, and green chili ,tomato, and red chilli powder, turmeric powder and coriander powder.

Saute the mixture, stirring frequently, until the raw smell disappears.

๐Ÿƒ Pour in the spinach puree and mix well with the potatoes and spices. Continue to cook, stirring occasionally, until the potatoes are cooked through and the spinach has fully blended with the spices.


๐Ÿƒ Add a little water if necessary to adjust the consistency. Cover and let the curry simmer on low heat for 2-3 minutes. ๐ŸƒSprinkle white sesame seeds over the curry just before serving.
