My savoury Sweet Potato entry for The Plant Based Challenge πŸ‘¨πŸΏβ€πŸ³ Week #29 πŸ‘©β€πŸ³

Hi all foodie food lovers out there eating the best of Mother Earths #plantbased gifts and good karma for you body and soul.

I hope that you're all well- and infact, I'm sure that you are doing so much better than the carnivores out there, even if it may not be physically, because eating clean like we do does reduce the susceptibility, the amount and severity of illnesses out there, but unfortunately we are all still beholden to our genetic makeup, in sickness and in health, until death us do depart...So atleast we feel healthier in our hearts, lighter in our souls and satisfied in our spirits knowing that we do not contribute to animal exploitation and sickening cruelty.

Anyway, for the #plantbased cooking challenge initiated by the awesome @justinparke, for this weeks challenge, I chose to get into more Sweet Potato, but on the savoury side this time, unlike my last Super sensational sweet, Sweet potato treat here if you want to check that out...@chocolatescorpi/this-super-naturally-sweet-foodie-experiment-comes-with-a-warning

And I decided to have a go at making a Sweet Potato, Asparagus, veggie Curry flavoured Japanese/Korean Pancake curry using these sexy green spear below, because Asparus is as nutritious as all of the vegetables, being a low-calorie vegetable that is an excellent source of essential vitamins and minerals, especially folate and vitamins A, C and K.

And Asparagus is a good source of antioxidants, including vitamins C and E, flavonoids and polyphenols. Antioxidants prevent the accumulation of harmful free radicals and may reduce your risk of chronic disease.

So Along with vitamin and mineral dense Sweet Potato, I also invited a range of healthy goodies along for the ride, such as Peas, Carrot, Cabbage, Celery and Corn.

And then I made the pancake batter curry sauce, using these much healthier versions of over processed white flours and lite Coconut Cream

And invited the Keen's curry powder to dive in and mix it up a bit

And then asked it to throw in some more to make it really pop without being too over the top (and spicy for me...)

Then laid it all very gently into the fry pan with a coating of my new Health Smart Safflower oil who is a rich source of monounsaturated and polyunsaturated fatty acids, which the American Heart Association (AHA)Trusted Source calls β€œgood fats.” In contrast, it contains relatively little saturated fat, which the AHA calls β€œbad fat.”

A study published in Clinical Nutrition suggests that daily doses of safflower oil may help improve blood sugar, blood cholesterol, and inflammation levels in people with type 2 diabetes. The I was starving and couldn't wait anymore so dished it up and began wolfing it down before I even took a photo of it!

So lucky I remembered before it looked like this...And as you can see, it was a delicious Curry flavoured Japanese/Korean Pancake but an even better veggie curry!!! 🀣
