In Indian culture, the routine meal is always simple and healthy yet delicious. India has the largest population that consumes plant-based food on regular basis. Due to its tropical condition here different varieties of vegetables and fruits are available around the year.
Nowadays brinjal is available in abundance so I prepared a very easy, quick, and delicious Brinjal, Potato, and Tomato trio curry.
Ingredients
- Brinjal 1/2 kg
- Potato 1 big sized
- Tomato 1 or 2
- Green chili 1-2
- garlic 10 cloves
- Spices and salt
- Oil for cooking
Procedure
- Wash all vegetables thoroughly twice.
- Cut into medium pieces, not very small.
- Crush garlic.
- Heat oil in the heavy bottom pan crackle cumin seeds and mustard seeds. Also, add other spices turmeric and coriander powder, and a pinch of asafoetida. Salt as per taste.
- Add garlic and chili, cook for a while. Then add potato and tomato and cook again.
- Add some water and brinjal. Mix well, cover, and cook for 15-20 minutes.
- Optionally sprinkle finely chopped fresh coriander leaves.
- Brinjal, Potato, and Tomato trio curry are ready to serve.
- Serve with hot chapati or rice.
