DELICIOUS VEGAN HOMECOOK: SESAME OIL MUSHROOMS BRAISED BEE HOON AND FRIED TOFU | 家常素食~麻油蟹味菇焖米粉和炸豆干~

Hello my dear vegan friends!

What is your favourite breakfast?

One of my favourite breakfast is vegetarian Beehoon with fried tofu. This signature food always made me to recall my childhood breakfast that my family packed from food court for me, and this accompanied numerous studying time.
Yesterday I passed by the wet market. I saw the tofu and mushrooms were all fresh. So I decided to buy few packs with some lettuces, Japanese cucumbers and preparing to cook.

Today let me share with you a delicious vegan homecook: Sesame Oil Mushrooms Braised Bee Hoon and Fried Tofu.

The ingredients are Beehoon, tofu, Brown Shimeji Mushrooms, ginger, Japanese cucumber, lettuce, chili, and corianders. The condiments are sesame oil, vegetarian oyster oil, Five-Spice powder, mushroom powder, chili powder, salt and pepper.

Firstly, rinse all ingredient inclusive Brown Shimeji mushrooms, ginger, Japanese cucumber, lettuce, chili, and corianders. Then cut the Brown Shimeji mushrooms, Japanese cucumber, chili, corianders and lettuce into pieces.

Dip the Shimeji mushrooms and ginger slides with sesame oil, vegetarian oyster oil, salt, pepper, and mushroom powder. Then put in fridge for dipping about 1-2 hour before cooking.

Put in a little of chili powder, salt, pepper and mushroom powder on all surface of the cut tofu.

Place the tofu into the air fryer tray. Then press 180 degree for cook 12 mins.

After 12 minutes, the tofu are done with golden looks, crispy outer and tender inner.

On the other side, prepare to cook the braised Beehoon.

Pour in 300ml of water and once it is boiled, put in Brown Shimeji Mushroom and ginger slides to cook for 1-2 minutes. Then can add in some corianders to enhance the mushroom soup base.

After 2 mins, put in Beehoon (dip the Beehoon in cool water for 5 mins before cooking)

After stir the Beehoon for 3 mins, put in some lettuces and sesame oil, vegetarian oyster oil, and a little of salt, peppers, and mushroom powder and continue stir the Beehoon.

After 5 mins, the Sesame Oil Mushroom Braised Beehoon is ready to be served.
