Barley is a cereal with many healthy properties. Its high soluble fiber content makes it ideal for lowering blood cholesterol levels, glycemia, and improving intestinal function.
Barley is a cereal that is similar in appearance to rice. However its grain is rounder. This cereal can be cooking in many ways. Today I share with you my tropical barley salad recipe.
One of the wonderful things that vegetables offer us is that they are foods with high water content, that's why they are ideal in hot weather.
1 cup of barley
2 medium tomatoes
1 medium avocado
1/2 onion
2 medium mangos
lemon juice
vegetable oil
salt and pepper to taste
cilantro to taste
This recipe yields 4 servings.
The first thing to do is to cook the barley. Place the barley to cook over medium heat. Use two cups of water. The barley will increase its volume. Once cooked, strain and set aside.
Wash the tomatoes well and chop them into small dice.
Carefully slice the avocado and add it to the tomatoes.
Peel the mangoes and cut the flesh into dice. Also, finely chop the onion.
Finally, add the cooked barley and mix well.
Dress with lemon juice, vegetable oil, salt, and pepper to taste. You can add chopped cilantro leaves when serving.
It is a very refreshing salad rich in fiber, minerals, and vitamins. It is a healthy option to eat as a main dish or accompany other meals. The combination of flavors is delicious. I hope you like my recipe and try it at home.
