Stuffed eggplant with quinoa / Recipe

Greetings dear friends. Today, I want to share a delicious recipe for stuffed eggplants with quinoa.

Quinoa is pseudo-cereal typical of the South American Andes region. It is considered a superfood because it has a high content of amino acids that make it a good source of protein. To make these delicious eggplants, you need:

3 large eggplants
1/2 cup quinoa
1 medium onion into the finely diced
4 tablespoons canned corn
4 tablespoons green olives
2 tomatoes, finely chopped
3 tablespoons tomato paste
dried oregano leaves
garlic powder
3 tablespoons vegetable oil
salt and pepper to taste

Bring 2 cups of water to a boil, when the water starts to bubble add the previously washed quinoa. Cook over medium heat for 15 minutes. Turn off and drain well.

Wash the eggplants well and cut them in half. With the help of a knife remove the pulp and set it aside.

In a frying pan, preheat the vegetable oil, and sauté the onion and add the eggplant pulp chopped into squares. Stir well and add the tomato, salt, and pepper to taste.

When the tomato gives off its juices, add the olives, the corn, and the quinoa. Add salt and cook over low heat for 10 minutes. Turn off and set aside.

In a cooking pot, place the tomato paste and add 1 cup of water, the dried oregano leaves, garlic powder, and salt. Mix well and cook over low heat. Meanwhile, stuff the eggplants with the stewed quinoa and place each portion of eggplant in the pot with the tomato sauce. Cover and cook over low heat for 20 minutes.

This is a healthy meal, low in cholesterol, high in fiber, and good quality protein provided by the quinoa. You can accompany these eggplants with white rice cooked with a fresh veggie salad.
