Any time is a good excuse to prepare a snack at home and share it with the family.
Today I went shopping and saw some beautiful cauliflower. I couldn't resist buying them. I usually prepare cauliflower in salads, but today I tried for the first time to make them differently. I was inspired by Japanese tempura but with an Indian touch.
1 medium cauliflower
1/2 cup wheat flour
1/4 cup cold water
1/2 tablespoon turmeric
1/2 tablespoon ground cumin
2 tablespoons black sesame seeds
peperoncini flakes to taste
salt to taste
vegetable oil for frying
The first thing to do is to cut the cauliflower stems and separate them into small florets. Try to make them uniform in size. Wash them well and let them soak for 10 minutes in water with vinegar to sanitize them well.
Rinse the cauliflower florets well and dry them with a cloth kitchen towel.
In a bowl place the flour with the spices (cumin, pepperoncini, salt, turmeric) and add the ice water. The water must be very cold and you must add it little by little so that a thick mixture is formed. Finally, add the sesame seeds and mix well.
Spread the mixture carefully on the cauliflower florets and fry in hot oil. Brown well and remove on absorbent paper.
This is an easy-to-prepare snack with a crunchy texture thanks to the sesame seeds. I accompanied it with a coconut and caper cream emulsion, a delicious combination. These Cauliflower Popcorn are ideal for a movie afternoon at home.
