INGREDIENTS
Rice (one cup)
Black caraota (2 cups)
Oil
Afrecho (70 gr)
Corn flour (1 1/2 cup)
INGREDIENTES
Arroz (una taza)
Caraota negra (2 tazas)
Aceite
Afrecho (70 gr)
Harina de maíz ( 1 1/2 taza)
PREPARATION
I washed the rice and took it to the stove with two cups of water, salt to taste and oil, I let it cook for fifteen minutes over medium heat, removed and set aside.
To prepare the dough I added corn flour, bran, salt to taste and water (2 1/2 cup), then I mixed until I obtained a smooth dough.
I organized the ingredients and divided the dough into portions; in a plastic bag to which I added oil, I placed the dough ball and flattened it until I obtained a thickness of approximately one centimeter.
In the center of the dough I added a spoonful of rice, a spoonful of caraota, covered with the upper part of the dough and with the help of a cup I cut in a half moon shape; to prepare the following empanadas I mixed the rice and the caraota, this way the flavor is better concentrated and in each bite there is a delicious sweet touch.
In preheated oil I fried the empanadas until golden brown on both sides, at this point I like them to be golden brown and crispy; the bran is a great ally to achieve the color and texture that I like, once cooked on both sides I removed and set aside. With the above ingredients I obtained seven empanadas.
To prepare the empanadas I used beans that I had frozen in the fridge, I usually divide it into portions and keep it at least three days in the fridge, the concentration of flavors is delicious, after cooking the empanadas I served and finished a delicious and nutritious breakfast.
Blessings!
Bendiciones!
