HOW TO MAKE YACHAEJEON aka VEGETABLE PANCAKE

A few blogs ago, I posted about my fascination with Korean food. Which you can find here @asasiklause/my-fascination-with-korean-food. I already posted the recipe of one of my favorite Korean Dishes which was Dubujorim or Spicy Braised Tofu.(@asasiklause/lets-make-tofu-less-boring-time-to-make-some-dubujorim)

In this blog I will share to you how to make Yachaejeon or commonly known as Vegetable Pancake. The Korean word "Yachae" means vegetable and "Jeon" means fried pancake.

This dish has been one of my go-to dishes whenever I ran out of ideas what to make for lunch or dinner. My friends really love this dish that they asked me to teach them how to make it. Whenever we decide to do Korean-inspired. dinner I will always make this dish because I know that they will expect for it.

I've learned making this dish during the early days of lockdown. From watching Maangchi's Youtube videos, I was encouraged to give this dish a try. My recipe and the vegetables I used is a bit different from Maangchi's recipe.

Here's what you need:

  1. Frying Pan
  2. Knife
  3. Chopping Board
  4. Mixing Bowl
  5. Measuring Cup
  6. Measuring Spoon

Here is the ingredients:

Make sure to thoroughly wash the vegetables.

-Pancake Mixture:
1 small carrots, julienned
half a large cabbage, chopped
half of a large white onions, sliced
4 stalks green onions, sliced
3 pcs green chilies, sliced
2 cups all purpose flour
2 cups water
1 tbp salt
oil for frying

Julienne is a slicing technique which means small sticks.

If you don't want your pancake to be spicy you can always remove this from the ingredients.

Slice the onions not too thick or not too thin.

Just chop the cabbage.

Slice the green onion around 1 inch.

Though, you will end up mixing these all, it's always nice to look a well organized vegetables on a plate.

-Dipping Sauce:
1/2 tsp sesame seeds, pan toasted
1/2 tsp sesame oil
1/2 cup soy sauce
1 tbp tsp vinegar
1/2 tsp chili powder

The vinegar was mixed already with the soy sauce in the bowl.

Here's how you make it:
1.Combine all the sliced vegetables in a mixing bowl.

2.Add the water, flour and salt to the mixture. Make sure all vegetables are covered with the batter.

3.Prepare your frying pan and heat some oil. Add your pancake mixture.

4.Spread the mixture around the frying pan.

5.Cook until golden brown and crispy then flip.

6.Make your dipping sauce. Combine all ingredients into a small bowl.

You can slice your Yachaejeon or tear it apart by hand or chopsticks.

A lot of people who tried this dish were so surprise of how it tasted. It is amazing how the taste of the vegetables compliment to each other very well. This pancake is crispy on the outside but slightly moist in the inside. I hope you will give this dish a try and please let me know what you guys think. Annyeong!
